How long/what temp. to cook a roast!!!!!!! QUICK!

I have a bottom round roast to cook for dinner tonight. It's 2:20, I'm thinking I should start cooking soon....what temp. and how long should I cook it? All my cookbooks are packed up. :goodvibes TIA
 
Depends on how big it is. I cook my roasts on 350 with a little water in the bottom of the pan and some sliced onion on the top of the roast. Great, tender meat! If it is only a couple of lbs and not frozen shouldn't take more then 2 hours and then I would check temp after an hour ...I hate meat that is over done. HTH
 
350 or even 375 is good. How long to cook it depends on how large it is. If you keep water or broth or something in the roaster you can't really overcook it. You know it's done when you stick a fork in and it slides easily in and out in the thickest part of the meat.
I'd start it now if I were you.

I cook mine at 350 degrees for an hour per lb. I put an envelope of onion soup mix and a can of cream of mushroom soup on top of the roast, cover ot with foil and put it in the oven. You can substitute any soup or just use au jus gravy mix, and about 1/2 cup of water.

It's probably too late for you to try this this time, but I like to start my roasts at a high temperature - 475 or so - for 20-30 minutes to "seal in the juices." then I lower the temperature to about 325 - 350. I put water with some bullion cubes (or the onion soup mix would be great too) and cover the roasting pan.

You know it's done when you stick a fork in and it slides easily in and out in the thickest part of the meat.
