Bought a prepared flank steak from Publix--they say to cook it thoroughly, but no temp and no time....

It is a half a pound each, rolled and stuffed with spinach and mozzarella cheese.

They look like pinwheels and are done as individual servings....

The things I am finding when I google are much much larger--with long cooking times. Anywhere from 30 minutes to an hour and a half with varying temperatures.

Thanks,

(And if someone posted this very question and it appears beyond page 3....well, I didn't look. I'm a rebel.:woohoo:)

I usually cook steak or beef until it reaches 135. I then let the meat rest for 10-15 minutes so the juices can redistribute. It will also continue cooking a little longer when you take it out of the oven.

Your recipe sounds great...will have to try that!

When I cook rolled/stuffed brasciole it's usually in the 350 pre heated oven for 45 minutes or so. I bet these are about the same size as your single serve flank steaks

I have a pet peeve about how no-one gives times anymore and gives temps for food safety instead. I get they don't want up poisoning ourselves with food born bacteria but a guesstimate would be a real help. When my friends or family ask when we're eating I can't get away with "When the food hits 150" never-mind the confusion with side dishes:rotfl:
