How long do you keep your deep frying grease?

Ok, this might be a gross question, but coming from someone who isn't a good cook (and therefore doesn't do it often), I think it's worth a shot. Growing up, I could swear that my mother would fry fish and then keep the grease in a container (but not refridgerated) to use it again at another time. Does anyone every do that? If so, how long do you keep the grease?
 
No we do not keep the grease. Whenever we fry anything (which is not often) we use olive oil or canola oil and once we are done we toss it.
 
Paula Deen on the Food Network was addressing this issue the other day. Her suggestion is to float french fries to catch the leftovers in the oil and store it (minus the fries of course) in a jar for up to one month. She also cautioned that you should always smell it first and if it smells rancid, to throw it away.
 
I am so glad that someone actually does this (and I'm not crazy). Loisg1, did she say to store it in the fridge or not?

I'm with Kimberly, I use it once then discard it and when I need to fry again I use some more. :D
 
Sorry, but I don't remember if she mentioned the 'fridge. Personally, I'd think the 'fridge would certainly be OK but then you probably don't store oil in the 'fridge that you've never used for frying.... Sorry

Heat, light and oxygen deteriorate the quality of oil and it's recommended to store cooking oils in the fridge after opening them.

I don't keep used oil, but would assume it's even more important to refrigerate it after heating to a frying temp.
 
I don't fry (almost started a fire the first time I ever tried deep-frying, so I'm scared to anymore), but I have heard that you can save the oil as someone described above. Just be super careful about using it if it is the least bit rancid. We used to live in an apartment and the upstairs neighbors fried with old oil almost every night--the stench of rancid oil was almost unbearable!
 
Thanks everyone. I fried the other day and wanted to use the oil again. It doesn't smell rancid at all so I'm using again right now.
