How late for dinning?

We will be at WDW during mid November 2003. With the parks closing early, what time can you make reservations for dinning? Do the restaurants stay open later than the parks?

For instance when Disney Studios closes at 7pm do we need to eat earlier than this say 6pm or can we make a 7pm reservation?
