If we want to stop by the bakery in either Norway or France and get some things to take back to the room (for late night snack or breakfast) - do we need to worry about the bakeries closing up before the park closes? How late can you pop in and get something? Do they tend to run out of the good stuff??

They close when the parks close, and they do run out of things. We've gone right before Illuminations and some things were completely gone already.

We got something from the France bakery right before Illuminations. We barely had time to get to the reserved seating area and eat before it started. So, my unscientific answer is they're open at least until the park closes. It also seemed to be well stocked, from what I can remember.

Tricia beat me, but it proves that there is no one good answer...I'd take her answer and go early enough to get a good selection.

We tried to get into the Norway bakery one night on our trip from Oct 25th to Nov 1st..sorry, can't remember which night specifically but it was 8:45 and we were told they were closed, they wouldn't serve us. Not sure about France.

The bakeries, along with most everything else in WS, stay open until the park closes. But as another posted said, not everything will be stocked up til then. If they run out soon before closing, they will not replenish anything that night unless they have it made already.
