How do you know when something opens up?

Sorry - I haven't made ADRs in YEARS!!

I'm reading on the November cancellation thread that some people are seeing reservations for 4 (or however many people) are opening up for certain restaurants for certain times. Are they searching specifically for those on Disney's website or is there some other place to go?

Please help!

You can go to Things to Do, Make Reservations, and select a time -- you can pretty much see all restaurants and availability around your selected timeframe.
