I think there are two advantages to hopping that may not have been mentioned.
If the day you've chosen for Epcot, MK or MGM has Illuminations, Wishes or Fantasmic cancelled due to weather, you can 'hop' back to those parks some other evening to catch the shows OR to see them several times. I found I was popping back into MK several times to catch WISHES. If you've 'done' Epcot and it wasn't your favorite, you wouldn't want to 'waste' a whole days ticket just for a return to catch a missed Illuminations, for example.
Also, it gives you lots of dining flexability. Quite a few of my favorite places are inside the parks and with a hopper you can alter your dining plans on a whim (provided you can get an ADR!). I've even used my hopper to be able to 'cut through' Epcot to get to the Boardwalk area for all those dining options...thus avoiding the resort to part to resort bus exchange.
This hopper option is only costing each person $3.50 a day. I'd think of it as 'insurance'
