How do you find out your rotation for restaurants?

My wife and I are traveling on the Disney Dream on 12/11. We want to eat at Remy's on the night we would normally go to Animator's Palate. How do you find out your rotation night of restaurants?

You won't know your specific rotation until you check in at the port. It's printed on your KTTW card. You can call DCL and request a rotation, but they'll point out it's only a request. In most cases such requests are honored, but not always.
 
It will be listed on your KTTW card which you get at check in at the terminal. It will have letters of the dining rooms in order of your rotation like:

C-L-A-C-L-A

Carioca's, Lumiere's, Animator's for example.

You may want to book Remy ahead of time even though you don't have your rotation yet because on shorter cruises they sell out and if you at least have a reservation to start with , they will be able to work with you to try to switch it to a different night or time. If you have nothing reserved at Remy prior to boarding you will just be out of luck completely.
 

I was planning on booking Palo on the 4th night of the cruise but wanted to do either Royal Palace or Animator's Palette on the 4th or 5th Night...so, I requested the RP / AP / EG / RP / AP rotation by calling DCL directly.

Even though I didn't go to Palo....they accommodated that rotation.
 
So, im apparently a noob b/c im not sure the benefit of specific dining rotations. . . what is the benefit of certain rotations over the other? What is the BEST rotation aboard the fantasy EB cruise?

IMO, there's no real "benefit" from requesting a specific rotation. Everyone onboard will dine in the same MDRs with the same menus during the cruise. Some people prefer a specific MDR for various reasons (want formal night in a more "formal" MDR, or want a specific MDR on a night they know they are going to Palo or Remy, if they don't care for a certain MDR or menu).

We've done Pirate nights as well as formal nights in all the different MDRs, and there's no difference in the service rendered. The "ambiance" of a specific MDR for a specific night is generally carried out through the menu and servers attire.

It's just one more thing that some people like to stress about pre-cruise.

There really is no best rotation IMO. Some people like to have formal night in Royal Court so they try to get the rotation that would have formal night fall on the night they are in RC. I used to be really picky about which rotation I had but have come to the conclusion (for me) that it really does not matter at all.

IMHO, the only reason to "worry" about the dining rotation relates to Remy/Palo dinner reservations...if you decide to do one of these experiences you will miss a MDR and you might not want to miss certain events...for example, do you want to see AP animation night? If so, your pre-booked Palo dinner could conflict depending on your rotation....(however, you can always try to switch things around if there is a conflict)...
so, the dining rotation letters on the KTTW card at the check in desk are important to forecast the amount of effort needed once onboard (perhaps heading to Royal Court to change Palo/Remy reservations)...
so, is there a best rotation? depends on your priorities and plans

We requested Royal Court for formal night once, but otherwise have trusted to chance and will probably continue to do so. As stated, it doesn't really make any difference in the long run.
