brine mine...Soak it in Kosher salt water overnight..I also add lemon juice,Sliced lemons ,white wine to the the brine,but you don't have too.
I also soak a cheesecloth in butter and put it over the turkey.It helps hold the butter when you baste it and gives the skin a wonderful dark color

. She brines hers and then BBQs it since her oven is small and she needs the room for all the goodies.
