how do you cook your chicken?

I'm getting bored with teryaki chicken. Please give me some new ideas! We eat a lot of chicken in our house and I am looking for some new way to cook chicken breast. What's your favorite recipe? New flavors?
 
Throw a whole chicken in the slow cooker for 8 hours with some turkey rub spices... quick and easy :thumbsup2

I love some of the campbell's soup recipes for chicken too!
 
i take brown rice and add cream of mushroom soup and skim milk and put it in a baking dish. put some chicken breasts in there, cover with foil and bake for an hour.

not that exciting but healthy and easy.

would love to hear your teriaki recipe!
 
In our house Chicken Fetticini Alfredo, Chicken Tacos, Chicken Stir Fry & Chicken Noodle Soup are hits.
 

We love to grill it.

BUT I also like to

take chicken breasts
bread them with bread crumbs or my aunt used crackers
put a little oil in the pan just brown each side of the chicken
get a dish with chicken broth and fill the pan about half way
put in the chicken breast
put on mozerella cheese and mushrooms
bake at 350 for about 40 min
 

make 2 foil pouches on a baking pan.
2 chicken breasts
1 pack of cream cheese cut in half (could probably use quarters)
seasonings of your choice

put a breast in each foil pouch, add seasonings and cream cheese.
close pouches.

bake on 400 until chicken is cooked (about 40 minutes or so)

serve with rice or noodles.

yummy!
 
We like chicken cutlets (breaded and pan fried). Sometimes we eat them 'as is', sometimes as chicken parm, sometimes tossed (after frying) with Tastefully Simple Bourbon Bayou sauce (which makes it taste exactly like TGIFriday's Jack Daniel's chicken appetizer).

(ETA: If you do this do ALOT of it! It's a pain to bread and fry but worth doing alot of it at once. Allow extras to cool, then freeze with pieces of wax paper in between, well wrapped in plastic and then in a freezer bag. Then you have an almost instant dinner! Just remove the # of cutlets you need from the freezer, cover in sauce and mozza cheese and bake. Boil some pasta while it's baking and make a tossed salad. Dinner is done!)

I like to marinade in italian dressing (I prefer Ken's steakhouse). Sometimes I'll doctor it with a little extra garlic or garlic pepper and some fresh lemon juice. I'll also marinade in orange juice and raspberry dressing. My 4 yo LOVES that. Any marinaded chicken breast can be grilled or broiled or baked.

I also sometimes dredge the chicken (whole boneless breasts or cut into 'nuggets') in either honeymustard dressing or ranch dressing and then into breadcrumbs that have been softened with a little butter and bake. Moist and really yummy!

I also will make cheater chicken fajitas. I cut the breasts up into bite size pieces, toss with a little fajita or taco dry spice mix and then pan fry in a little bit of oil. At the very end you can add just a little water to deglaze the pan and make a little bit of sauce. (Or just buy a taco mix packet and follow the instructions for using with chicken.) I serve with soft tortillas (fajita size ones), lettuce, tomato, sour cream, salsa and yellow rice.
 
Marinate then bake in italian salad dressing. I like to serve this with cubed potatoes that I've tossed in a olive oil and my favourite herbs then baked on a cookie sheet for around 45 minutes(they get crispy on the outside). You wouldn't believe how good the house smells while this is cooking.

If you're ever in Eastern Ontario, pick up some St. Hubert BBQ sauce. I'll just make up a packet and marinate then bake in that. I keep a bit aside from the marinade so I have dipping sauce for when I'm eating.

Many times I'll just sprinkle on my favourite seasonings and bake in the oven. It's simple and everybody seems to like it. The key is to not overcook. Most people tend to overcook chicken.

Leftover poultry is great in hot chicken sandwiches or buritos.
 
I make a double batch of a white sauce (I use the Betty Crocker recipe), but instead of milk I might use broth for the liquid, or go half milk, half broth. Once the sauce thickens, I toss in two cups of bite size pieces of chicken breast meat and stir. Serve over white rice and with a veggie on the side. Salt and pepper to taste. My family gobbles this up and we love it in the cold weather months. If the chicken is already cooked, this takes less than 20 minutes to make.
 
Spray a pan w/Pam, put the chicken in and sprinkle it with lemon pepper, cook it well and you've got lemon pepper chicken.

Do the same thing as above but instead of lemon pepper use Mrs Dash, or garlic salt, or onion salt, or combine them all.
 
For something super easy you can pick up the Crockpot Gourmet packet for chicken (sold where other dry marinades and mixes are), then just toss in chicken breasts, which ever veggies you prefer and let it cook all day. The chicken come out super soft and yummy, and my kids love this served with rice. We didn't like the other variations on the back of that packet though, but the country pork one on the back of the Crockpot Gourmet for Pork is also amazing.

We also do:
~Pulled chicken - crockpot again with your fav bbq sauce, cook all day and shred (pull apart) right before your ready to serve
~Chicken tacos
~Chicken and cheese quesidillas - butter a burrito shell toss in a frying pan w/ mexi cheese and chicken, a little salsa, and cook it like a grilled cheese
~Balsamic Chicken - Similar to the Marsala recipe linked above but substitute balsamic vinegar for the marsala wine and skip the essence, mushrooms are optional.

I do the same with all broth, but it's not very good with canned broth. Also... once the sauce boils, I put a bit into a bowl with a beaten egg. Then return the egg mixture to the pot, then add the chicken. My dd's favorite! (In fact, I'm making this tonight!)

If you make white sauce with milk, add a little sherry to it, put in cooked chicken and veggies.


Another is to brown chicken breasts and sliced onions, add some water and some dry mustard and sugar. Then add some lemon juice and white vinegar (5:1 ratio). Thicken with flour/water mix. Serve with rice or noodles. (You can also add sourcream at the end because this is actually my beef stroganoff recipe!)

Another favorite is Chicken Madeira from Recipezaar's website. I don't make as much sauce, but we love that one!
 
My DH is the cook in our house and he's been on this kick recently where he cooks it in a salsa/water mix. He does different things with it like makes sandwiches, wraps, etc...
 
I take chicken breasts and throw them in a crockpot with a jar of salsa and a can of beans like kidney or black beans. It cooks for 7 hours or so on low, and when it's done, the chicken is easy to shred with two forks. I serve it in tortillas with sour cream and shredded cheese. Yum. :)
 
I mash up some corn flakes, add seasoning salt , black pepper and garlic powder .Dredge cutlet thru flour dip in egg then cornflakes.Bake on cookie sheet at 350 degrees 30 mins each side.

OR I make Bruschetta chicken, it is a taste of home recipe.
 
take 4 boneless skinless breast
1 jar of salsa
1 can of corn
1 can of black beans
1 can of rotel tomatos

add all of it to the crockpot cook 8-10 hours on low
shred chicken in the crock then add a block of creamcheese
let melt in the crock
serve over rice or tortila chips
 
I sometimes take taco seasoning mix and bread crumbs mix half and half with a little S/P and coat chicken breast throughly. Place in 400 degree oven for 45 minutes. I usually serve with spiced Au Gratin potatoes and a veggie. Great quick meal.

was taught to me by a friend of ours

ingredients
#1

1 chicken cut in pieces
1/2 teaspoon of salt
a pinch of pepper

#2
1 can of tomato sauce (8 onz)
1 onion ( diced)
1 green pepper (diced)
2 tablespoons of chopped cilantro leaves
1 chopped garlic clove
1 or 2 dry bay leaves
2 tablespoons of vegetable oil
1/2 teaspoon of apple cider vinegar
1/4 cup of water

3 medium potatoes (peel and diced)
1/2 cup baby carrots


take the chicken and cut it in pieces , wash and dry and season it with salt and pepper

in a pot(large) heat the vegetable oil and add onions , pepper , garlic , cilantro leaves and bay leaves and saute them for few minutes, add the tomato sauce and vinegar , combine all the ingredients well then add the chicken and top it with the potatoes and carrots and add the water , cover the pot and let it cook for about 35 to 40 mins medium heat

we usually have it over white or brown rice....My kids love it:) and it really easy to do...

PS we have used red wine instead of water and it is really delicious too!!!!:thumbsup2
 
Here are other versions of breaded chicken my family really likes:

Brush chicken with bbq sauce, dredge in cornflake crumbs and bake

brush with italian dressing and use extra crispy shake and bake

mix mayo and mustard, brush on chicken, dredge in crumbs (this one is great on fish too!) and bake
