In the crockpot? We are having a sleepover this weekend and they want a taco bar, so I thought I would put chicken out there too. So how do you make it in the crock pot? :confused3

I would throw some chicken breasts in with seasoning (and a little water), or just salsa and then shred it when its fully cooked and let it sit for a few minutes and serve.

I've done it with thighs and breasts. (I find that the chicken breasts alone tend to dry out in the crock pot.)

I've just put the meat in the crock pot with taco seasoning and some chicken broth and let it cook. Shred the chicken before serving.

I would not make it in the crockpot. Chicken dries out too much.

As far as making chicken tacos, you buy some chicken breasts, cut it up, put it in a pan, cook it, only takes a about 10 mins or less for cut pieces to cook. Then you add the seasonings and dash of water just like it is beef.

If you are just trying to have the meat on hand prepared early then just make ahead of time, refridgerate, and microwave when you go to prepare them later.

I got a super easy recipe I got from the DIS (one of the recipe threads). My kids both love them and that's not easy as I have one that is a very picky eater. So, here is the recipe.

4 Chicken Breasts (I put them in frozen)
1 Packet of Taco Seasoning Mix
1 Cup Canned Chicken Broth (I put in the whole can)

Then I cook all day and then shred the meat. Very easy and good.

The key to keep chicken breasts from not drying out is to not overcook them in the crockpot. It is very easy to do, especially if you have one thats temp runs hot. I cook about 4 hours on low for a lb and I never put them in frozen because I always thought they dried out quicker. You also need to make sure you have enough liquid, and a good seal and do not open your lid until they are done :thumbsup2

Ok, now its even more confusing frozen/not frozen? 1 pound plus 1 pack of seasoning and 1 can of chicken broth? SO, my crock put does run a high temp and I need them done around 7 pm, so how long should I cook for?

I always put chicken in frozen. I pour salsa verde (tomatillo sauce) over the chicken, cook on low for about 5 hours (my crockpot cooks too hot, too). Once cooked, shred the chicken and stir in a few tablespoons of sour cream. YUM. had that for dinner last night.

Don't be confused, you can use frozen, I just don't. I think I always ended up overcooking it because I was worried with it being frozen that I would undercook it. For me, if I use thawed breasts I can get them to come out nice and moist and tender.

I only ever use frozen (basically because I never think ahead to take anything out of the freezer).

I cook all day on low (so for at least 8 hours). The chicken has always come out very tender and juicy for me.
