I have more broccoli than we can eat right now but I do not want it to go to waste. How can I cook/preserve and freeze for future dinners? Thanks!!

Oh...I also have some ears of corn to do, too! Any tips on parboiling corn??

I'd trim, wash and dry the broccoli then lay it on a cookie sheet and pop it in the freezer until frozen solid then put it in a ziploc bag. For the corn I've husked it and then wrapped each ear in foil and frozen it.

Might I suggest steaming the broccoli? Boiling takes all the nutrients out of it.

I'd suggest "blanching" it before you freeze it so it will store well and for a longer period of time. That means put it in boiling water for around 30 seconds or so. Then let it cool, package it in the thickest freezer bags you have, squeeze out all the air possible, seal it and store it in the coldest section of your freezer.

I would suggest FootTV.com. They have all the answers.

Thanks! I think I will be doing some blanching later. I have a vacuum sealer, so I will blanch then package it up and freeze. Thanks for all the help!!

Instead of letting them aircool, drop them into icewater to stop all cooking immediately.

Absolutely. This is how I blanch all my veggies when freezing.

I've never done corn on the cob that we felt was worth eating. I can't explain why - we just don't like it. (We don't even buy it from the store on cobs.) I always cut it off before freezing.
