How can you make a dish less salty?

My mom called me up with a dinner emergency. She prepared a beef dish and she thinks it tastes too salty? Is there any trick to getting rid of or toning down the salty taste?

If it is a saucy dish, and she can keep cooking it, she could add some hunks of raw potato to it--the potato will draw some of the salt (and juice) out of the dish as it cooks. She should then discard the potato and add back as much liquid as necessary to get the sauce consistency right.

Another option with a saucy dish would be to discard half of the current cooking liquid, and then replace the volume with unsalted stock, adding other seasoning (herbs or whatever) to taste.
 
Doesnt throwing in a chunk of potatoe help? Then just throw out the potatoe. I think that works in soup.
