How are the buffets being handled?

I have a friend who is cruising soon and asked me to find out about the buffets and what's happening now.

Specifically:

Is anything self-serve (I assume not)?
Are you able to tell the servers how much you want of something - and get that amount?
Are there a lot less options at the buffet the pre-COVID?

No self serve. Yes you tell the CM how much you would like and yes there are fewer options, but we didn't feel it was a lot less. There also seems to be variations based on the which ship you are on.
