Hotels on I-10 through Mississippi and Florida

Does anyone have any recommendations for hotels along I-10 in Mississippi and Florida? We are coming from Texas and looking to have some pre-selected hotels to stop at just in case we get tired during the drive to WDW. Our goal is to at least make it to Pensacola that first day of driving.But want to be prepared just in case that doesn't happen.
