Hosting Exchange Student - What Moderate Hotel?

We are hosting an exchange student from Spain and trying to decide on which moderate resort to stay at when we go. We will be there April 2017.

Would love to hear about your favorite, and why. Thanks!

If they're from Spain, Coronado Springs I'd say would have a theme loosely similar to their home.
