Hors d'oeuvres question (non-Dis wedding)

Sorry, this is a non-Disney wedding, but I wanted your opinions! We are trying to figure out our menu and need some help. The cocktail hr will start at around 12:30 so we'd like the menu a little lighter. I always had a nice fruit, cheese, and/or veggie display in mind. It just sounds like nice, light afternoon apps. We got a few quotes so I just wondered what you would go for or like to have as a guest.

displayed: domestic and imported cheeses with assorted fancy crackers, fresh fruit with assorted dips: $6.25 pp

served: Brie, pear, and almond purses, soup "sips" in demitasse cups, and sesame chicken skewers: $4.70 pp We can pick from a lot of different served apps, and they'll be mostly around this price.

She said they only prepare one hors d'oeuvre pp for the served buffet and one 1/2-2 pp for the displayed. One per person just seemed a little low to me. Is that normal? Thanks!

I just had my wedding. We had fruit and yoguart with a international cheese display. I had 48 guests and ordered each for 25. There was plenty. Remember not everyone will eat each of the things offered.
