Honouring a lost loved one at Disney

My sister and I will be taking a trip to Disney World with our families using funds we received from my mom passed away unexpectedly. My mom wasn't a huge Disney World fan like a lot of people on these boards, but the day she passed we did all talk of taking a trip to Disney in the future together. She would have loved spending time with the grandkids, sitting by the pool, and being together as a family.

We don't want the trip to be a sad affair, but would like to find an appropriate way to honour mom. Is there anything special we could at Disney that would be an appropriate memorial?

Maybe just make a point to reminisce over dinner. Make a toast.
