* Horse back riding at Fort Wilderness or a carriage ride at Wilderness Lodge
* Sit on the beach at the Polynesian and watch the Wishes fireworks
Restaurants:
* Victoria & Albert's it's very romantic and there are no children under a certain age allowed.
* Narcoosee's and California Grill both offer you viewing of the Wishes fireworks and they both offer great food.
* Jiko is great too, really top notch service! The Animal Kingdom Hotel is stunning to wander through and grab a drink. When we were there in the winter they had a lovely fire pit and rocking chairs all set up outside, I'm not sure if they have that in the summer though!

If you're interested in popping outside of Disney and like animals I'd also highly recommend Discovery Cove. It's such a beautiful place with all inclusive food and drink (REALLY great food!) and of course you get to swim with the dolphins!
