Homemade Waffles- How do you make them?

I'm looking for some good recipes for Belgian Waffles. Santa will be bringing us a Belgian Waffle maker for Christmas. I'd like to have a "festive" waffle breakfast for Christmas morning. DH does not really like waffles made from pancake/waffle mix. :santa:
 
I know it is not exactly what you were looking for, but we LOVE Krustez Belgian waffle mix. It comes out nice a crispy, and doesn't taste like any other pancake/waffle mix we have tried.
 
I don't know if there is a difference for belgian waffles but this is the recipe I use:

1 3/4c flour, sifted
2 tsp baking powder
1/2 tsp salt
1 Tbsp sugar
sift all together.
beat 3 egg yolks, add 2-7 Tbsp melted butter or oil and 1 1/2 c milk. Blend with dry ingredients
Beat 3 egg whites until stiff but not dry and fold into batter.

These make a light fluffy waffle. I think the key is the beaten egg whites. My mother in law told me she uses pancake mix, I never thought it tasted right. These taste "right" to me.

Also, when we do these we make double or triple batches and freeze them individually and then put them in ziploc bags. We reheat in a toaster and they end up being firm or crisp (? don't know how to describe it) but if I did that with a pancake mix based one, they seemed limp.

What kind of maker/brand are you getting? We love these when we travel, some hotels have them. I've looked in stores and the makers seem so flimsy. And the professional ones are really expensive! TIA!
 

Edited: D'oh, I just realized you were looking for Belgian waffle mix, and this is not a good recipe for that. But I'll leave it anyway in case anyone needs regular waffle mix info ;)

You have to try overnight waffles. I first saw them in Joy of Cooking, but you can find various recipes from people like Mark Bittman and America's Test Kitchen. You make them the night before, and they sit on the counter overnight...yes, even with the milk in it. It makes the yummiest waffles, with that perfect mix of crunch and tenderness. There are many different versions, pretty similar. I find that the one that does NOT require you to beat the egg whites to be easier, and the ones that use yeast a little better. Ditto this!!! The Fannie Farmer recipe for overnight waffles is the BEST!
 
We buy our mix from Williams-Sonoma. It's malted and tastes incredible, but it's $10.00 a can. We buy it for our Anniversary and any other special time.

We also love te malt mix from Williams -Sonoma. However, we bought the Food & Wine Fest cookbook at WDW in October and they have the recipe in there for the Belgium waffles they served at the Belgium booth complete with the delicious fruit topping in it. Yummy and very easy to make. :thumbsup2

Blondietink, Thanks for the recipe idea from your food and wine festival cookbook. It sounds like a winner. I found it on another website.

I'm also going to buy a box of Krustez waffle mix to have on hand for those busier mornings.

ETA:I bought an Oster brand Belgian Waffle Maker. It does flip over like the ones hotels use. I think that's the reason I bought it. My family loves to make waffles at the hotels.

Same for me! The Krusteaz Belgian is the best. You have to add eggs, oil, and water so it's not like the "instant" type of mixes. It comes out great every time, so I don't have any other recipes.
 
I use the trader joe's buttermilk pancake mix and follow the waffle mix on the back. It makes the most yummy waffles. I just got a waffler maker at walmart on black friday and I love it. It's like the one in hotels that flips. Everyone in my family loves this mix.

This is the recipe we use; but we have a standard waffle maker that is NOT Belgian/deep "squares". Ours is more of the thickness of Eggo but it's maybe 9" across.

Sour Cream Walnut Waffles

2 C flour
1 1/2 tsp baking powder
1/2 tsp baking soda
2/3 C chopped walnuts (or pecans)
1/4 C sugar
2 eggs, separated
6 Tbs melted butter, marg, or oil (we use marg)
1 1/2 C milk
3/4 C sour cream

In large bowl, mix all dry ingredients together.

In microwave safe medium bowl, melt butter and then add milk, sour cream, and egg yolks and mix together.

Beat egg whites in separate bowl until stiff.

Mix liquid bowl into dry ingredients. Then fold in egg whites.

Pour or spoon batter onto hot waffle iron and cook until golden.

Makes 6-8 (standard) waffles.

I don't have a waffle recipe, but I have a SUPER EASY pancake recipe!!

1 C Whole Wheat Flour
1 T Baking Powder
2 T Oil
2 T Honey or Maple Syrup
Dash of Salt
Dash of Cinnamon
3/4 C to 1 C Water or Milk of choice

I don't have a recipe - but I have one that includes waffles - this is our Christmas morning tradition - it's the old recipe from the Crystal Palace - before they added pound cake to it. Very, very rich and filling.

Breakfast Lasagna
from the Crystal Palace, Magic Kingdom

(6 servings)

Make the pastry cream first
1-1/2 teaspoons vanilla extract
6 egg yolks
1-1/2 cups milk
1/4 teaspoon salt
1/4 cup all-purpose flour
3/4 cup sugar


In a 2 quart saucepan, combine sugar, flour, salt and milk over medium heat and cook stirring until mixture thickens. In a small bowl with a fork, beat egg yolks slightly, beat small amount of milk mixture into yolks. Slowly pour egg mixture back into milk mixture. Stirring constantly, cook over medium low heat until mixture thickens. Remove from heat and stir in vanilla extract. Chill cream until ready to use.

Assembly:
6 pancakes
6 waffles
1 pound of strawberries
8 ounces of blueberries


Put a thin layer of Pastry cream in a pan, make a layer of waffles, put a layer of pastry cream. Cut strawberries into slices. Take half the strawberries and half the blueberries and make a layer of fruit. Top the fruit with a layer of pancakes, then layer of pastry cream. Garnish the lasagna with the rest of the strawberries and blueberries. Bake in a 350 degree oven for 20 minutes.
