Homemade Pizza Dough

I made an extra batch of dough once and froze it, and it was such a pain!! In the time it took to thaw, then arrive to room temperature enough to work, I could have made it from scratch.

I work all day, so for me, the breadmaker is best. I put all the ingredients in, set the delay, and when I come home, I have fresh dough, ready to pizza-fy.

The money you spend in the machine will be made up in the money you save by making your own dough. And, making it easy to make your own dough, so this doesn't become a passing fancy, but the main way you make your pizza.
 
Here is the recipe that use the time. We love it!

4 cups flour
2 cups water
1 pkg yeast (3 tsp)
1 tbsp sugar
1 tsp salt
2 tbsp olive oil
1 egg

Knead for 5 minutes. Let rise 1 time. Makes 3 median size cookie sheets of pizza. Bake at 425 degrees.

I use almost this exact same one, but I swap one bottle of room-temprature beer for the water, leave in a warm spot for about an hour to rise, punch, and then rise again....then I sprinkle a bit of Cream of Wheat on the pans before I press the dough in. It is delicious!!!! Crunchy/crusty bottom, doughy interior, very good...makes more of a thick pan-style pizza. EVERYONE loves it!!!
 
I make homemade pizza every Saturday night and the family says its better than any restaurant. I use the recipe that came with my Kitchen Aid and I get a better rise if the bowl is preheated (fill with hot water for 5-10 minutes).
1 pkg yeast
1 cup warm water
2 tsp olive oil
1 tsp salt or Garlic Garlic from Tastefully Simple
Add 2 cups flour, stir with dough hook until dough clings to the book and add about another cup of flour. Knead with dough hook (speed 2) about 10 minutes, dough will clean the bowl sides and no longer feel sticky.
Preheat oven to 175. Coat the inside of large oven safe bowl with olive oil, add dough ball and turn til coated with oil. Cover with Saran, put in oven to rise and TURN OVEN OFF.
This is enough for 2 12" round pizzas, and I bake mine on round pizza stones from Pampered Chef. 12-14 minutes at 450. Yum!!!

Mix the dry ingredients together, then at the water and oil.

Oil an oven safe bowl and rub the dough with oil. I just spray PAM on both. Cover with waxed paper and put in a warm oven for 30min.

Bake at 400 degrees. I put all my toppings but the cheese and bake for 9 min, then add cheese and bake for 9 more minutes.
 
Well all this talk of pizza dough made me crave a pizza so we made this pizza dough for lunch and topped it out. It was our first time with this dough and really appealed because there is not time needed for rising. It was delicious and we could not tell any difference from the dough we make that normally takes over a hour to make.

This is almost exactly the recipe I use, but I do it in my bread machine. Mix the water, oil, salt and sugar, top with the flour (I use three cups whole wheat flour and one cup all-purpose flour) and the yeast. Put on dough setting. When it's done, I pat it out onto two 12 inch pizza pans (greased), put on the toppings and bake at 400 degrees for 15 minutes.

Somebody asked about freezing their dough. What I do is roll out the dough into individual pizza's, cook the crust - so you have a Boboli type crust - and I will freeze that. That way everyone can make their own type - my favorite lately has been using BBQ sauce, then slices of chicken, apple and purple onion - reminds me of the appetizer at Jiko's!!!

I use the recipe in my Joy of Cooking cook book! :) I admit when I first started making it, it wasn't that great, but now that I have done it for so many years my dough is perfect!

Now that I have a few dough recipes, can anyone share any good pizza sauce recipes please?!
 
My family does not like pizza sauce so we just use diced tomatoes with olive oil and garlic. We also use a white pizza sauce for when we make Italian beef pizza (the recipe is on Lipton onion soup boxes). We had a fab. BLT pizza from the local pizza place and are so we are going to try to replicate their pizza. It seems like they just used tomatoes as well with a mayonnaise and bacon sauce but we could be wrong......
 
I use the master bread recipe from the book Artisan Bread in Five Minutes a Day. Making the dough is easy. Get a big container and mix water, salt, yeast and flour together. You let it rise for a few hours than the dough can be stored in your fridge for up to 2 weeks. It makes awesom loaf bread or artisan bread also.

This sounds amazing! DS has food allergies so this would be great for me to have in my fridge to be able to use--for all different types of breads...and cinnamon rolls! He has only had them once--they took so long to make--and they were not very good.:blush:

Now that Bisquick is "safe" for DS, we have been using Bisquick for pizza dough. I have to make most foods from scratch for DS, so to have something quick and easy has been a lifesaver! 2 cups Bisquick to 1/2 cup water. As you can tell, we aren't real particular about our pizza dough.

I make my own sauce. I just crush up a can of San marzano whole tomatoes and then add a little italian spices and a little crushed red hot peppers. It is very simple but so delish on grilled pizza.
 
Have any of you ever tried grilled pizza? It is delicious! I oil both sides of my dough with olive oil and then just throw it on my grill. When the first side is done, I flip it and then add my toppings. Delicious!

The longer you let it "rest" the better. It's not as good as a pizza restaurant's, but better than frozen.

I tried this recipe this morning. We tried the recipe as is except for the flour. I used all purpose flour. DD and I liked it. I made a 2nd batch just incase the yeast didnt work(my 1st time cooking with yeast)The 2nd batch i added garlic, onion powder and oregano to the dough. I made 1 mini and i medium pizza to freeze so i didnt taste that one yet. Trying to freeze it isnt a good idea. Once you make the pizza its hard to pick up and put in freeze bag to freeze. I had to leave it on the cutting board and place in freezer until its solid to transfer.

I often buy the frozen loaves of bread dough and make them into stromboli or pizza. Trader Joes also has pizza dough balls in the refrigerated section. I think they are $.99.

Yes, 99 cents and it is good Pizza dough.
