Are there any DVC studio rooms or `1 bedrooms that allow 5 people?

Most DVC studios and 1BR have accomodate 4 people plus a child under the age of 3 (in a pack n play crib). I am told there are some studios at Boardwalk villas that have an additional small daybed suitable for kids so you can have 5 people.

However, the Studio Plus cannot be reserved and you may or may not get it. The so-called "daybed" is nothing more than an upholstered luggage rack, about 4 feet long with a thin pad on it. It fits in the space where the doorway would be to a connected one bedroom, if there was a door.

Unless your 5th person is under the age of 3, you will need a two bedroom.

You can get a Ft Wilderness Cabin that sleeps 6, though. Also considered a Home Away from Home, but not a DVC resort.
