Hollywood studios and AK - FP help, please

Tomorrow is the day so I'm trying to map out my strategy. Two questions, please

1. My DH and I have 7 day tickets. My sister and her spouse will be joining us, right now they only have 4 day tickets. When they arrive we will up those tickets to 5 days. This means that in the morning I can only book their FP for four days rather than 5. So I was thinking that HS might be the best place to do stand by rides or to make those once we add a ticket day. We don't really care about riding Toy story, and Rockin' Roller coaster will be closed. Do we need Fast Passes for GMR or ST if we get there early?

2. We plan to spend all day at AK what rides/shows besides Everest are a must get?

2. Most people book Safari and Kali River Rapids.
