Holiday Recipe Exchange sent/received thread...COMPLETED!!

Amaretto Cheesecake I

1 cup graham cracker crumbs
3 tablespoons white sugar
3 tablespoons butter
2 (8 ounce) packages cream cheese
1 1/4 cups white sugar
3 tablespoons cornstarch
1 (16 ounce) container sour cream
1 1/2 teaspoons vanilla extract
5 tablespoons amaretto liqueur
1/2 teaspoon salt
4 eggs

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
Mix together the graham cracker crumbs and the 3 tablespoons white sugar. Add the melted butter and mix well. Press into the bottom of a 9 inch springform pan. Bake in preheated oven for 10 minutes, set aside.
In a large bowl, combine cream cheese, sugar, and cornstarch, and mix until smooth. Add sour cream, vanilla, amaretto liqueur, and salt. Mix until well blended. On low speed of an electric mixer, add eggs one at a time, mixing well after each addition. Pour batter over crust.
Bake in preheated oven for 60 minutes. Remove from oven. Loosen around the edges with a knife and cool on a wire rack while still in pan. Refrigerate, remove from pan when completely chilled.

Bailey's Chocolate Cheesecake

Amount Measure Ingredient -- Preparation Method

1 1/2 cups chocolate cookie crumbs
1/3 cup confectioners' sugar
1/3 cup unsweetened cocoa powder
1/4 cup butter
3 packages cream cheese -- (8 ounce) softened
1 1/4 cups white sugar
1/4 cup unsweetened cocoa powder
3 tablespoons all-purpose flour
3 eggs
1/2 cup sour cream
1/4 cup irish cream liqueur

To Make Crust: Mix together the cookie crumbs, confectioners' sugar, and 1/3 cup cocoa.
Add melted butter or margarine and stir until well mixed.
Pat into the bottom of a 9 inch springform pan.
Bake in a preheated 350 degrees F (175 degrees C) oven for 10 minutes, set aside.
Combine cream cheese, white sugar, 1/4 cup cocoa and flour, mixing at medium speed with electric mixer until well blended.
Add eggs, one at a time, mixing well after each addition.
Blend in the sour cream and Bailey's Irish Creme, mix on low until blended.
Pour over baked crust.
Bake at 450 degrees F (230 degrees C) for 10 minutes.
Reduce oven temperature to 250 degrees F (120 degrees C) and continue baking for 60 minutes. Remove from oven.
With a knife, loosen cake from rim of pan, let cool then remove the rim of pan.
Chill before serving. If your cake cracks, a helpful tip is to dampen a spatula and smooth the top and then sprinkle with some chocolate wafer crumbs.

Brownie Caramel Cheesecake

Amount Measure Ingredient -- Preparation Method

1 package brownie mix -- (9 ounce)
1 egg
1 tablespoon cold water
14 ounces caramels
5 ounces evaporated milk
16 ounces cream cheese -- softened
1/2 cup sugar
1 teaspoon vanilla extract
2 eggs
1 cup chocolate fudge topping

Preheat oven to 350 degrees. Grease the bottom of a 9 inch springform pan.
In a small bowl, mix together brownie mix, 1 egg and water.
Spread into the greased pan.
Bake for 25 minutes.
Melt the caramels with the evaporated milk over low heat in a heavy saucepan. Stir often, and heat until mixture has a smooth consistency. Reserve 1/3 cup of this caramel mixture, and pour the remainder over the warm, baked brownie crust.
In a large bowl, beat the cream cheese, sugar and vanilla with an electric mixer until smooth. Add eggs one at a time, beating well after each addition. Pour cream cheese mixture over caramel mixture.
Bake cheesecake for 40 minutes. Chill in pan.
When cake is thoroughly chilled, loosen by running a knife around the edge, and then remove the rim of the pan.
Heat reserved caramel mixture, and spoon over cheesecake. Drizzle with the chocolate topping.

Broken Glass Jell-O Salad

1 - 3oz. package Jell-O of each
lime, orange, cherry, & lemon
1 cup pineapple juice
1/4 cup sugar
1 pint whipping cream
20 graham crackers, finely crushed
1/3 cup melted butter
1/4 cup sugar

Prepare each lime, orange, & cherry Jell-O separately with 1-cup hot water and then ½ cup cold water in bread pans. Let set. Once these are set, heat pineapple juice and ¼ cup sugar until sugar is dissolved. Pour over lemon Jell-O mix in bowl, then add ½ cup cold water and whiping cream, mixing lemon mixture. Let set. Cube other Jell-O and fold into lemon mixture. Mix crackers, butter and ½ cup sugar. Press into 9x 13 pan. Pour Jell-O mixture over this and chill.

Tony Roma's Baked Potato Soup

2 medium potatoes (about 2 cups chopped)
3 tablespoons butter
1 cup diced white onion
2 tablespoons flour
4 cups chicken stock
2 cups water
1/4 cup cornstarch
1 1/2 cups instant mashed potatoes
1 teaspoon salt
3/4 teaspoon pepper
1/2 teaspoon basil
1/8 teaspoon thyme
1 cup half and half
Garnish
1/2 cup shredded cheddar cheese
1/4 cup crumbled cooked bacon
2 green onions (green part only) -- chopped

Preheat oven to 400 degrees and bake the potatoes for 1 hour or until done. When potatoes have cooked remove them from the oven to cool.
As potatoes cool prepare soup by melting butter in a large saucepan and saute onion until light brown. Add flour to the onions and stir to make a roux.
Add stock, water, cornstarch, mashed potatoes and spices to the pot and bring to a boil. REduce heat and simmer for 5 min.
Cut potatoes in half lengthwise and scoop out contents with a large spoon. Discard skin. Chip baked potatoes with a large knife to make chunks that are about 1/2" in size.
Add chopped baked potato and half and half to the saucepan, bring soup to a boil, then reduce heat and simmer the soup for another 15 min. or until it is thick.
Spoon about 1 1/2 cups of soup into a bowl and top with about a tablespoon of shredded cheese, a half a tablespoon of crumbled bacon and a teaspoon or so of chopped green onion.

Toffee Cranberry Crisps

1 cup butter -- softened
3/4 cup sugar
3/4 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 1/2 cups quick-cooking oats
1 teaspoon baking soda
1/4 teaspoon salt
1 cup dried cranberries
1 cup miniature semisweet chocolate chips
1 cup English toffee bits

In a mixing bowl, cream butter and sugars. Beat in eggs and vanilla.
Combine flour, oats, baking soda and salt. Gradually add to creamed mixture.
Stir in cranberries, chocolate chips and toffee bits.
Shape into three 12" rolls. wrap each in plastic wrap. Refrigerate for 2 hours or until firm. Unwrap and cut into 1/2" slices.
Place 2" apart on ungreased cookie sheets.
Bake at 350 degrees for 8-10 minutes or until golden brown. Remove to wire racks to cool.
