Holiday Recipe Exchange sent/received thread...COMPLETED!!

I'm going to have to sit down tonight to figure out what I need for my last "extra". Then I'm going to run to the store tomorrow night. Then I'll be able to package it all up and get it in the mail on Saturday.

And I think I'm going to start working on next year's recipe exchange. (Yes, planning ahead.) I've got some great ideas, but they'll take a little more time, so I'll start working on it now. And...since my idea will make a nice gift too...can't hurt!

Thanks Nancy! I'll call her tonight. If you want to send the PM to me too, I can give her the info over the phone if she hasn't gotten over to her friend's house to use the computer. She had been hoping to go over there one night this week, but since they messed up her work schedule once already this week, she may not have had a chance yet.

Pumpkin Crunch Cake

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
29 ounces pumpkin
1 can sweetened condensed milk
1 cup sugar
2 teaspoons cinnamon
1 teaspoon allspice
1/2 teaspoon cloves
3 eggs
1 package yellow cake mix
1 cup chopped pecans
1 cup butter or margarine -- melted

Line a 13x9" baking pan with waxed paper.
Mix together the first 7 ingredients. Pour into prepared pan.
Sprinkle cake mix over mixture in pan. Sprinkle pecans over top. Pour melted butter over all.
Bake at 350 degrees for 1 hour. Let set 5-10 minutes. Flip pan over onto tray for serving.
Serve with Cool Whip or whipped cream.

In a bowl mix flour, sugar, baking powder, baking soda, cinnamon, nutmeg and salt.
In another bowl beat to blend milk, pumpkin, eggs and oil. Add flour mixture and stir until just blended.

Sour Cream Banana Bars

1 1/2 cups sugar
1 cup dairy sour cream
1/2 cup butter or margarine or butter -- softened
2 eggs
1 1/2 cups mashed bananas -- (3 large)
2 teaspoons vanilla
2 cups flour
1 teaspoon salt
1 teaspoon baking soda
1/2 cup chopped nuts
Browned Butter Frosting
1/4 cup butter
2 cups powdered sugar
1 teaspoon vanilla
3 tablespoons milk

Heat oven to 375 degrees. Grease and flour jelly roll pan, 15 1/2 x 10 1/2 x 1 inch.
Mix sugar, sour cream, margarine and eggs in large mixer bowl on low speed, scraping bowl occasionally, 1 minute.
Beat in bananas and vanilla on low speed 30 seconds.
Beat in flour, salt and baking soda on medium speed, scraping bowl occasionally, 1 minute. Stir in nuts. Spread dough in pan.
Bake until light brown, 20 to 25 minutes. Cool. Frost with Browned Butter Frosting.
Cut into bars, about 2 x 1 1/2 inches.
Browned Butter Frosting: Heat butter over medium heat until delicate brown. Remove from heat. Mix in powdered sugar. Beat in vanilla and milk until smooth and of spreading consistency.

Pumpkin Cheesecake

Crust
1 1/2 cups graham cracker crumbs
1/3 cup butter or margarine -- melted
1/4 cup granulated sugar
Cheesecake
24 ounces cream cheese -- softened
1 cup sugar
1/4 cup packed brown sugar
2 eggs
1 3/4 cups solid pack pumpkin
2/3 cup evaporated milk
2 tablespoons cornstarch
1 1/4 teaspoons cinnamon
1/2 teaspoon ground nutmeg
Topping
2 cups sour cream -- room temperature
1/3 cup sugar
1 teaspoon vanilla extract

Crust: Combine graham cracker crumbs, butter and sugar in a medium bowl.
Press onto bottom and 1" up side of 9" springform pan.
Bake in preheated 350 degree oven for 6-8 minutes. Do not allow to brown. Cool on wire rack for 10 minutes.
Cheesecake: Beat cream cheese and sugars in large mixer bowl until fluffy. Beat in eggs, pumpkin and milk. Add cornstarch, cinnamon and nutmeg. Beat well.
Pour into crust. bake at 350 degrees for 55-60 minutes, until edge is set but center still moves slightly.
Topping: Combine sour cream, sugar and vanilla in medium bowl.
Spread over surface of warm cheesecake.
Bake for an additional 5 minutes. Cool on wire rack.
Chill for several hours or overnight. Remove side of springform pan before serving.

Banana Split Cheesecake

Crust
1 1/2 cups graham crackers -- crushed
1/2 cup sugar
6 tablespoons butter
Cake
2 pounds cream cheese -- softened
5 jumbo eggs -- at room temperature
1 cup sugar
3 teaspoons lemon juice
1 cup sour cream
1 1/2 cup mashed banana
1/4 cup cornstarch
1/2 cup heavy cream

Crust: Mix and pat into bottom and sides of 10" springform pan.
Beat the cheese until light. Add sugar and beat again. Add eggs one at a time, beating after each.
Stir in cream, sour cream, vanilla and cornstarch and blend well. Stir in banana.
Preheat oven to 350º with pan of water on bottom of oven.
Bake cake for 1 hour until edges firm.
Cool and refrigerate.

Apple Danish Cheesecake

1 cup flour
1/2 cup ground almonds
1/4 cup sugar
1/2 cup cold butter or margarine
1/4 teaspoon almond extract
Filling
8 ounces cream cheese -- softened
1/4 cup sugar
1/4 teaspoon cream of tartar
1 egg
Topping
1/3 cup packed brown sugar
1 tablespoon flour
1 teaspoon ground cinnamon
4 cups thinly sliced, peeled tart apples
1/3 cup slivered almonds

In a small bowl, combine flour, almonds and sugar; cut in butter until crumbly. add extract. shape dough into a ball; place between 2 sheets of waxed paper. Roll out into a 10" circle. Transfer to a greased 9" springform pan; gently press dough against the bottom and up sides of pan. Refrigerate for 30 min.
In a mixing bowl, beat cream cheese, sugar and cream of tartar until smooth. Add egg, beat on low just until combined. Pour over crust.
In a bowl, combine brown sugar, flour and cinnamon. Add apples and stir until coated. Spoon over the filling. Sprinkle with almonds.
Bake at 350 degrees for 40-45 min. or until golden brown. Cool on a wire rack for 10 min. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight. Remove sides of pan.
