When do they start decorating the parks for Christmas?

The short answer: early November

They gradually add the Christmas decorations over the first couple of weeks in November.
Last year we attended the last MNSSHP on Nov 1 and started seeing Christmas decorations on Nov 2.

They start at the MK after the last MNSSHP of the year ( this year that would be November 2) and they work on them at all parks and resorts to have them completed by Thanksgiving weekend

They'll be up in time for the first MVMCP which is 11/9. That is the safest date to bet on.

Thank you. We are thinking about going down for a day the week of Thanksgiving and I was hoping the Holiday decorations would be up.

Normally shortly after New Year's Day. Weather dependent.
