"Hold the cheese": Modifying orders at quick service restaurants?

Does anyone have experiences modifying orders at quick service restaurants? Specifically I'm talking Disneyland...hyperspecifically I'm talking "no cheese" on the french toast sandwich at Red Rose Tavern...but I could mean no cheese on any sandwich or no whipped cream on a desert. I haven't been yet, and the "dairy allergy" offerings in the mobile orders aren't ever anything my kid will eat, but there are plenty of options if I'm allowed to make "hold the x,y,z" modifications. Doesn't look like I can do that if I mobile order, but if I order i person?
 
I have definitely ordered customized meals/sandwiches at the restaurants at Disneyland. I am not a fan of sauces and there is a sandwich at Red Rose Tavern I have had a few times without the sauce. I know I have ordered in person and via mobile order. And the Galactic Grill used to have a breakfast sandwich with something on it I did not like. I could not order it via mobile order without that item so I definitely ordered that one in person. One note, it often takes a few minutes longer to get your "customized" sandwich or item and it will have a note for "No XXX" on it.

there shouldn't be a problem modifying in person.

Does your child have a dairy allergy or just doesn't like cheese/whipped cream?

If your child has a dairy allergy, there will be more dairy in the item than just cheese. For example, the french toast in the french toast sandwich is made from a dairy custard. So, you can't just take the cheese off and have a no dairy item. And the bread itself may also have dairy.
 

Dairy sensitivities aren't always super cut & dry. There can be lactose intolerance or casein sensitivity or even just the size of the cow dairy molecules causes immune response, where goat is fine. Many children with dairy allergies can have dairy that's been baked at a certain temp for a certain amount of time. Flare ups might be immediate or might be take cumulative exposure.

That's true...but since you didn't post exactly what your child's issues are, and only mentioned that you were unhappy with "dairy allergy" offerings, it will be very hard for posters to help you. Some things may be removable and others are not, so even if you could remove cheese, a dish may still be unsafe for your child, not knowing what the actual child's issues are. And at CS, if you don't know the ingredients of each item on the dish, it will be hard for you to know if removing one would making something fully safe or not for your child.
