Sure, the Dolphin Cruise would be a fun family experience. There are a number of family activities - campfires, magic shows, stories, nature hikes, etc. - that a 2yo might enjoy with parental guidance. You will get a complete activities listing for your stay when you check-in at the resort.

This is great news. I'm going to HH for the 1st time this summer and will be taking 4 kids on my own. AGH! I was worried there would be things, like the dolphin cruise, that the older kids (12, 10, 8) would want to do that the baby would be too young for.

One more question: Do they have rental bikes with baby seats?

There may be others who've "been there, done that", but I'm one who's actually been with a pre-two year old on a Dolphin Cruise.
The family I joined had a little boy who was about 1 1/2 years old with them. He seemed to really enjoy the cruise. Depending on when you're thinking of it, be sure to bring a little jacket for him, even if it's nice when you first leave. Just before we left, the weather was so pleasant that the father almost ran his jacket back to the villa. Good thing he didn't-it got cold coming back!
