Marriedmyprince -- To answer some questions,
1. It should be easy enough to get from the south wing to the main wing with a stroller. The walkways are clear and level with no odd stairs, etc. Elevators are easily accessible.
2. The entrance to the food and fun center has a ramp for wheelchairs and strollers, so that's not a problem either. It is a rather small area, but I saw plenty of strollers inside there.
3 We did eat at Chef Mickeys for breakfast and there was a childrens buffet line, but they were not forced to eat only from that line. Should be the same for dinner.
4. As for buses, we avoided them since the one time we took bus to Epcot took 30 minutes because of stops at Polynesian and Wilderness Lodge. My advice -- drive to other parks if you have a car!
5. Work is currently being done on the North Wing and the shops on the concourse. I know that on the left side there were a couple of shops closed. Still, a beautiful hotel.
My one advice -- avoid overscheduling in order to give kids down time. I was extremely dissappointed with kids food choices at dining establishments using the dining plan. Boy are mine sick of chicken nuggets and macaroni! More choice from Disney Please!!!
I hope this helps ---
