I have a bumper fresh herb crop that I want to make last. I have done some pesto and will freeze some pesto this weekend also. I will freeze some herbs. But I'd really like to make some herb oils. I am getting conflicting info online about the safety of this. I want to put fresh herbs into oil. Do I need to refrigerate it? If so how long will it last. If I simmer it a bit do I not need to refrigerate it? One of the things I read is that if I put garlic or hot peppers in it then I will need to keep it refrigerated but as long as the herbs are not wet I'm ok to keep it in the pantry.
Any other ideas for the herbs? I am also making some compound butter and freezing it. I have a bit of thai basil and I"m unsure what to do with this.
