Helping son lose weight - Need Ideas

I have been trying to help my 7 year old lose to weight/change eating habits. So far so good. We have taking all junk food out of our house and starting to eat healthy everyday. No more soda or juice boxes. He feels good and has not complained yet.
He does not like alot of veggies and only a few fruits but we keep introducing new ones.

Does anyone have a baked chicken recipe they good share. We have been eating alot of grilled chicken and I would love to do something different this week before he gets bored.

Any other ideas would be greatly appreciated also. Thanks everyone :goodvibes
 
My 11 year old LOVES cornflake chicken. It's chicken breast coated in flour, then egg whites, and then, crushed cornflakes with seasoning. I know that cornflakes aren't the healthiest thing ever, but then, it goes in the oven, so no frying. My hubby loves it too. I season with a salt substitute and crushed red pepper. I think I cook it at 350 or 400 for about 20 minutes, but am not 100% sure, since I don't have an actual recipe.
 
Great job with the changes so far! It starts with the parents and it looks like you are dedicated to making sure your children are healthier.

This is a good idea just don't use bleached white flour. Try to get some whole wheat flour which is easy to find. I think King Arthur makes a brand readily available in most stores.
 

I cook chicken in the crock pot (2 large breasts) with 1 slice lemon and a bottle of low fat italian dressing. Gives it a nice fresh flavor.

Another favorite is die coke chicken:
1/2 cup Ketsup
1/2 cup salsa
1 12oz. can diet coke
4 chicken breasts
Bake at 350 for 30-40 minutes
 
Thank you everyone. I am going to try these recipes they both sound great. Looking forward to hearing from you CoachJason. It's been over a week and he has lost 3 lbs so far but I can see he is getting a little bored with the choices I having been giving him.
I was so happy today when he asked for some apple slices :thumbsup2 That would have never happened a couple of weeks ago.

my best hint - if you are using ranch dressing as a dip - put it in a serving size bowl/cup, it is way easy to use half a bottle as a dip

slice lemons & put in water & store in the frig for a cold drink (no sugar or sweetner)

I bake chicken with a touch of soy sauce, add garlic & other spices

We has been using the crystal light mix ins and he has getting a lot of water in him that way.

I make chicken nuggets from breast meat or tenders and Fiber One cereal. Pulverize the cereal - best for me has been the blender - add garlic powder, chili powder, some paprika, ground pepper, whatever flavors you like. Rinse the chunks, pat dry and dredge in the cereal. Bake at 350 for 20 minutes or so. Mustard with a little honey and you're set.

I just wanted to add that (unless he has allergies) there are options that have similar statistics to chicken. Also, you may want to consider different types of chicken. It is fun to eat a cornish hen and has a bit of a different taste. Drumsticks are not as unhealthy as one might think.

Here are some other ideas, although I'd check the labeling for adding salt/sodium...just in case.
- Ground Turkey Breast: You can add a small amount of taco seasoning and serve it in a corn taco shell or corn tortilla. (Wheat tortillas usually have more calories, etc.) I add lettuce, tomatoes, onions, and salsa. A small amount of low-fat or fat-free sour cream goes a long way. Same with cheddar cheese.
- Unsweetened soynut butter: I love this stuff! It is great for a last-minute sandwich. I've had it on various different breads- rye, whole wheat, Italian, whatever we have in the house that is relatively healthy
- Pork Tenderloin: We just had that roasted with veggies in condensed cream of mushroom soup (98% fat free).
- Fish: Baked, grilled, or seared- I eat most fish, but I know others who won't eat any. You could try kabobs using scallops or shrimp grilled with veggies.

I remember baby-sitting and trying to get the kids to eat the healthier foods. They were big fans of corn dogs and I was not. What worked best for me was having them participate in making it. I don't know how interested your son would be in that, but that helped me a lot.
