Thanks for the help and input all. I sat down with them yesterday and feel like we came up with a few pretty good plans / ideas. No matter what, I know they will have an amazing day!

On the Fast Passes, do you HAVE to show up within window? I know with the older system at WDW you could show up a little after expiration of the window.

The official is YES, must be in the window, in reality, usually 5 to 10 minutes are given, especially if you are nice to CM and explain why you relate (stuck in pedestrian traffic, an issue with the last ride, etc.) But it is up to the CM to make the final decision.

You have to show up within the window now. Before, it could be anytime after the window, but now it is within the window.

If the ride was down during the window they'll honor it for the rest of the night. I would not count on even a 5 minute grace period. Many people have reported being turned away after less than 10 minutes, and during a busy time I wouldn't expect any exception.
