Help with planning park days

We are going to FL May 29-June 12.
We will be getting 7 day base park passes. I always used crowd calendars to plan trips. We have been going to WDW regularly for the past 25 years. I feel so lost with the planning.
The first week some of our group is going to Universal for 2 days (5/31 and 6/1). One person in our group is only there the first week and I need to put MK, Epcot and DHS in that time frame. Are there any better days than another for these parks? My open days are Sunday 5/30, Wed 6/2, Thur 6/3 and Friday 6/4.
This seems so overwhelming to me and I used to have it all down. Any help or suggestions are appreciated. Thanks

All parks are the least crowded on the weekdays, but that is even more true of MK and Epcot. Tuesday and Wednesday are the best for MK and Epcot I would avoid Fri-Sun. I would then squeeze HS in where it fits from there. So I think I would do MK 6/2, Epcot 6/3 and HS 6/4.
