Help with planning our days

I'm overwhelmed! :confused:

We will be at WDW for the first time in MANY years. Taking our children who are 7,7 and 5 for the FIRST time. We are staying offsite but not far away.

Here are my concerns. How quickly in the park should we get to a kiosk to schedule our fast passes? Should we do that first or should we go enjoy the shorter lines first thing in the morning? We plan to get there for soft opening every day except Wednesday we have 8:15 breakfast reservations.

Here is the schedule...

Monday Epcot, get there for opening (my parents and brother will join us)

Tuesday MK get there for opening(my parents, aunt and uncle and brother join us)
We definitely want to see the parade. Girls are obsessed with frozen and I'm not sure any of us are standing in line for a meet...

Wednesday Epcot or MK again (just the five of us)

Thursday Animal kingdom the five of us and my parents (we leave the next day and thought this would be a shorter day?)

We HAVE to do test track at least once. Our DS loves cars/racing. We also think he will love world showcase as he is really into Geography and cultures. We want to balance this with princess!princess!princess! That the girls want.

We won't go on big roller coasters or "scary" things.

Sorry this is very long and rambling! Anyone have advice? What our mornings should look like?
