Help with my trip plans!

So for a quick run down, we are going on Monday, Jan. 23rd and coming back on Sunday the 29th. It's going to be me, my wife, our daughter (who's 2 and a half), and my mother. We have the free dining plan, and as of now we only have a few FP+ reserved. Any help/suggestions/advice is more than welcomed! Here's what we have so far:
Monday- Hopefully get to our resort between 1-2. First we will need to get lunch and more than likely take a nap. We are planning on going to Epcot that afternoon/evening. We have FP+ for Spaceship Earth at 230, and for Nemo at 330. We have a ADR for Teppen Edo at 710. I was thinking on getting a FP+ for Frozen that evening before dinner. After dinner, we'll just play it by ear.

Tuesday- Magic Kingdom- Be there for opening! Daughter loves trains so that'll be a huge treat for her. We have ADR for QS at Be Our Guest. Then we have a FP+ for Splash at 1040 and one for Peter Pan at 415. At 5, we have dinner at Crystal Palace. What should we do in the morning? I assume most of what we will do is the kid friendly things.

Wednesday- AK- The only thing we have planned that day is dinner at Tusker House at 6. I assume we'll try to go on the safari earlier in the day. I've heard that's the best time to go. Other than than I'm not really sure how much time we will spend there that day. Suggestions on what to do there is needed!

Thursday- Hollywood Studios- The only thing we have this day is Lunch at Sci-Fi at 11. We will likely go to fantasmic that night, so dinner suggestions that are QS are needed. Also, do younger kids do fine on Toy Story? She LOVES Toy Story and she would really love it, I just don't know how she would do on it.

Friday-Epcot- The only thing we have that day is Biergarten for dinner at 620. I was thinking to do Nemo again and spend a decent portion of the day doing the World Showcase. Last time my wife and I were there it was F&W and we didn't get to spend much time there. I'm really looking forward to this.
Also, I am going to get the Disney After Hour tickets for that night. I think my wife and I would love to have that time to go out in the park and my mom will stay with our daughter.

Saturday- Magic Kingdom- All we have is dinner at 1900 Park Fare at 620. I'll go to Caseys (most likely) for lunch that day. I've heard great things about it (as far as QS dining goes) and would like to try it. Other than that I just want a fun day.

Sunday- Magic Kingdom- Our flight leaves at 7pm so we got tickets for an extra day. We just figured we would take things slow and just see how everything goes. Probably do more low key things.

So there's my plan as of right now. I think what I most likely would like help with is some FP+ reservations, and some QS places to eat. We will need suggestions at each park.

1 unless ou get one 60 days out it is unlikely soaring or TT is doable

2 nice restraint but I am not sure I would wast great park time in a restraint ( but you do have 3 days and the DAH ) so then I would be ok with it

3 with breakfast taking up an hour I would just do any rides that are short or that are kid friendly

4 I have been different times of the day all are very cool so yes go first thing but then get a FP for latter in the day ( it is worth going 2x)

5 show show show then back to your hotel to rest ( I think it you do not have park hopper) then maybe back for the night. ( I do not think ROL will be going on but you never know)

6 not sure

7 I would think this is up to how your DD dose but it could be and since she loves Toy story I think she will really like it

8 should like a good plane maybe make a FP for one of the top 3 tier rides you did not get

9 I want lest year so much fun walked on to all the rides and save room for ice cream ( I would suggest you take a rest at your hotel this day before going to DAH

have a great trip and remember to rest some you have a nice long stay so do not be afread to go back to your hotel to rest some ( or where ever you are staying

You're not going to have time for a nap, and you barely have time for lunch if you're going to make those FP+ times. Are you driving to parks or using Disney transportation? The good news is, you probably won't need the FP for those attractions, so if you NEED a nap, take one and then head to EP in time for dinner.

She will LOVE Toy Story Mania. Get a FP+ for it and also go at rope drop. She's going to want to do it more than once. All of the shows at HS will be good for her too.

As for QS places to eat, check out the menus and see what appeals to you all, then come back and ask questions about the ones that tickle your fancy.
 
We are flying in and using ME. My hope is that our daughter sleeps during the ride. We land just after 11 so I hope I'm being very generous with my times. If I am then we should have plenty of time.....I hope
 

Using ME, you should be checked in and in your room by 1:00pm, assuming no flight delays. You'll have until 3:30 to use your first fastpass, with using Disney transportation, you really should leave an hour to get to Epcot (unless you're staying at one of the Epcot resorts and able to walk). So that means you would have to be out of your room by 2:30. That leaves you 1 1/2 hours for lunch and nap, which is not a lot of time. I would just move the fastpasses to later in the day.

For your Tuesday MK day, if possible, I would move all your fastpasses up to late morning/early afternoon. That will give you the opportunity to add more fastpasses later in the day. With a 2 1/2 year old, I definitely think you'll want to focus a good chunk of time in Fantaslyand.

For your AK day, there is a lot to see aside from just the attractions, lots of walking paths and animals to see. If you think it may be a challenge to do a full day in the park, this may be a good day to consider some down time in the morning to enjoy your resort. Head to AK midday with a fastpass for Safari.

Hollywood Studios - definitely do Toy Story, it's a lot of fun. You'll want to get a fastpass booked for that, because the line can be very long.

For all your other days where you don't have fastpasses noted, I would definitely get some booked, it can save you a lot of time and if you're concerned about not knowing exactly what time or if you'll make the times, don't worry about that too much because they are free and no penalty for missing them and you can often change them on the fly anyway (except for a handful of headliners).
