HELP!!! with knife selection

I invested in Cutco knives about 3 years ago. They are terrific! They are still sharp today. Cutco now offers a Santuko knife. They didn't when I purchased my knives. I am planning on purchasing one, too.

Funny this question was asked, we had a Cutco rep come over and show me knives yesterday. Loved them! Way expensive for us right now though. Loved the ice cream scoop and potato peeler too!:)

If you have the $ to spend, I would recommend these knives.
 
There are a lot of good quality knives out there and even the best need some periodic maintenance. The steel is used on a regular (daily) basis to "turn," or straighten, the sharp edge of the blade to a true straight edge. A sharpener is used when the edge becomes dull and every edge will become dull with enough use.

Softer steel will be easier to sharpen, but will lose it's edge quicker. Harder steel will hold it's edge longer, but requires more sharpening to get that edge. The trick to getting a sharp edge on any knife is patience. There are a lot of good sharpeners and methods that will work well, but a good blade requires more patience than anything, especially if it's been allowed to get too dull.

If you turn your blades every time you use them, you should only have to sharpen them every two or three months, but spend the time to get them to a really sharp edge when you do.

I have the Wusthof santoku and it's excellent! It sharpens well and cuts better than any knife I've ever had. I got it at Williams Sonoma 6 years ago for about $80 I think. Great knife!

MICKMAN1962...can you recommend a sharpener? I've read up on them and the quality varies greatly. The one I have is poor!!! Would love to see my Henckels sharp! ;)

And about the CUTCO knives...did all of you have in home demos to purchase them? :confused3 I clicked the link and was surprised there was no price and order form.

Too funny, the OP was from 2006. LOL How do these get bumped back up? I would think they'd be deleted by now. LOL

But, I have Cutco and love them. I have the Santuko knife they offer and it's my absolute favorite knife!! I have a rep who comes to my house to sharpen our knives, of course I normally end up buying something new but they are worth it. :)
 
Where do these newbies get these old threads from? :confused3 Why would they come to the CB, see all the current pages upon pages of NEW threads to post and join in on, but instead, do a search for "knife sharpening" to post on? Did this person come here purposely to try to sell us on the warthog knife sharpener? :scratchin
