I would guess the cabins are much more rustic than the Fort, but what about Bill Frederick Park at Turkey Lake? It is maintained by the City of Orlando and is really near Universal. We stayed there for a few days a few years ago in our RV and really liked it. Definitely fishing there (and disc golf, bike paths, swimming, playscapes). At a campground cabin you'll probably need to furnish your own linens and all of that, so not a resort in that aspect, but it might be worth a look!
