Help! Strawberries!

My father in law gave me a flat of fresh strawberries. A flat consists of 8 large plastic containers.

What do I do with all these strawberries??? I don't want them to go to waste.... but we can't possbily consume this many strawberries before they go bad!

HELP!
 
Yummo strawberry jam...


This is a freezer recipe, so you do not have to do all the boiling etc of the jars. It is a very easy recipe.

NO - COOK STRAWBERRY FREEZER JAM

4 c. ripe strawberries
4 c. granulated sugar
1 box Sure-Jell powdered pectin
3/4 c. water

Wash and hull the berries; crush them completely, a few at a time. (Should end up with 2 cups.) In large bowl, mix together the berries and sugar. Let stand 10 minutes. Combine pectin and water in saucepan. Bring to boil; boil 1 minute, stirring constantly. Stir hot pectin into the fruit bowl; continue stirring. Don't worry if sugar is not completely dissolved. Ladle jam into freezer containers. Put lids on immediately. Let stand at room temperature 24 hours or until set. Refrigerate for a few weeks or freeze for up to a year.

Fruit salsa is also REALLY yummy. My kids love it...and it takes 1 lb of strawberries per batch. We usually eat one batch in 2 days at my house!! :thumbsup2
Here's the recipe:

Fruit Salsa
Ingredients

* 2 kiwis, peeled and diced
* 2 Golden Delicious apples - peeled, cored and diced
* 8 ounces raspberries
* 1 pound strawberries
* 2 tablespoons white sugar
* 1 tablespoon brown sugar
* 3 tablespoons fruit preserves, any flavor

* 10 (10 inch) flour tortillas
* butter flavored cooking spray
* 2 cups cinnamon sugar

Directions

1. In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.
2. Preheat oven to 350 degrees F (175 degrees C).
3. Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.
4. Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture.
 
Wow! Thanks for the quick replies! I really appreciate it! You know what I'll be doing tomorrow... freezing strawberries. It gets really hot here in Texas in the summers... one of our favorite afternoon treats is a fruit smoothie! These strawberries are gonna be perfect!

I know... my father in law spoils me with fresh produce all the time.... but not usually in such bulk! (Well, there was the time he gave me a 50.. yes 50 pound bag of potatoes!) But.... 8 pounds of strawberries!!! That's $40!! And let me tell you... these are beautiful strawberries too. He works for a produce packing company.... ;)
 
Here's my favorite strawberry recipe; if you like the flavor of cheesecake, you'll love this! It's from a Disney cookbook that we bought at WDW in the late 90's - I don't remember where the recipe originally came from (the Garden Grill, possibly?) and my own copy of the recipe is on a cue-card, copied by my mom so I can't check the book. :goodvibes

Disney's Orchard Favorite Crepe

Crepe Batter:

2/3 cup flour
1/2 teaspoon salt
3/4 cup milk
3 beaten eggs

Combine all ingredients and beat until smooth. Let stand 30 minutes. For each crepe: pour 2 tbsp batter into hot lightly greased skillet. Cook on one side only until underside is lightly browned and top is dry. Repeat until batter is all used.

Filing:

1 cup cottage cheese
1/2 cup sugar
2 cups sliced strawberries
1 cup sour cream

Combine cottage cheese and sugar in blender. Blend until smooth. Fold in strawberries and sour cream. Fill each crepe with 1/4 cup of filling and top with any remaining filling.

I'll be honest, my mom and I still make this for breakfast when I'm at home. :rotfl: Ok, so it's not healthy, but it is delicious!

STRAWBERRY SOUP

INGREDIENTS:

16 oz Strawberries (frozen variety, thawed with juice and pureed)
16 oz Sour Cream
1 Tbls Lemon Juice (frozen variety, reconstituted, not concentrated)
2 Tbls Vanilla Extract
3 oz Sifted Powdered Sugar (by cup measure)
1 Tbls Grenadine Syrup
2 oz Half-and-Half

METHOD OF PREPARATION:

Mix strawberries and sour cream, beat slowly until well mixed. While mixing, add grenadine, lemon juice, vanilla extract and sugar until a smooth consistency. Add half-and-half and mix for five seconds. Chill, shake well before serving. Fresh strawberry halves may be added as a garnish.

i smash some up add a lil bit of sugar or no sugar then top on to pancakes or waffles-yum!!!!!!!!!!!!!

Oh I wish I knew someone like your father. I love produce but it is so expensive here in CT.
I of course vote for Margaritas.
Frozen strawberries are my grandson's favorite treat in the summer. I get them from Trader Joes and just give him a bowl full to eat outside when it is hot out.
 
The freezer jam is to die for!

Fancy greens, sliced strawberries, walnuts, goat cheese, a pinch of fresh thyme all tossed in a nice vinagrette dressing make a fabulous salad.
 
Turn them into pie and mail it to KYDISNEYFANS in Georgetown, KY.
 
We live very near a pick your own field so we pick a lot during the summer. I wash, slice and add spenda (sugar if your prefer). Pack in plastic containers and freeze. I took my last carton out this past week to add to my pancakes on a snowy am. SO GOOD.

We also love strawberry cobler or pudding. We eat a lot on ceral or just with cream for dessert.

That's the easiest thing to do, and kids tend to like them for eating that way too. Mine like them so much that I've all but replaced ice cream and popsicles with various frozen berries.
 
6 lbs of strawberries on a very large cookie sheet in my freezer. So thankful for such an enormous freezer! We will be enjoying them all spring and summer!
