Help! So many restaurants, so little TIME!

I've been going over these plans for so long you'd think I'd have it done, but I'm around 12 days from making my ADRs and I'm just not sure... My biggest thing is there are still restaurants I want to fit in! Should I do more TS lunches? DS is 4, has autism so we tend to move a little slower through the parks and spend more time relaxing at meals than most. We will be there from Dec 11-18, staying at POP with hoppers on the dining plan. All days have free afternoons at the resort. I also have a LONG list of alternates to make sure I at least get something. I'm also worried that we only have 2 character meals planned.

Day 1: arrival, EP-WS
lunch at pop foodcourt or Seasons (or snack around countries)
Dinner: Alfredo's (I usually ask for the earliest dinner time avail)

Day 2: MGM
lunch at SciFi (pay OOP)
CS dinner eaten while waiting for Fantasmic

Day 3: MK, Fantasyland & MVMCP
CS at Harbour House
5:30'ish LTT before MVMCP (right now have a 6:35 that I'd like to bump up)

Day 4: AK
lunch at Tusker House
dinner at Boma, around 6 (will drive there after rest)

Day 5: MK Tomorrowland
CS lunch at Cosmic Ray's
dinner at CRT, 5 PM (DH wants to eat in the castle, DS will be bored and I have been there)

Day 6: EP-FW, Date Night at PI
CS lunch at Epcot, Seasons or WS area
dinner at Yachtsman, 8 PM

Day 7: Free Day (revisit anything we have missed or a favorite park)
CS wherever we are
dinner at O'Hana 5'ish--go back to MK ONLY to see Spectro/Wishes (I think it will be PACKED there this night) **should I skip this? Plan to go to MGM Mama Melrose and see Osbourne Lights OR go back to Epcot in the evening and eat at Le Cellier (dying to try!)**

Day 8: MK, departure day
lunch at CP around 11
(alternate is WCC)

I didn't fit in WCC or Le Cellier

Oh, and DH wants to try surf lessons on the Friday morning, but I think TL will be closed for rehab. If he does go surf on Friday morning, we will not go to a park and do Epcot Futureworld on Saturday

I am out of mind and need to stop this planning! :rotfl:
 
Forgot to add I would be willing to change Boma to something else. We will have our car, so can drive to any of the resorts to eat that night. DH and DS would probably prefer WCC or O'Hana. Mostly I want to see AKL! Also we've done CP twice before, DH isn't crazy about it but I like to end the trip with a character meal, and it's only the second one of the week. We don't do scheduled breakfast, will either grab something at foodcourt or eat in room.
 
Can you have an early lunch at Le Celler on day 1 thenm ake your dinner at Alfredo's later seating instead of an early one, or vise versa.

Maybe on day 5 you can leave the park to go to WCC for an early lunch. You son might enjoy the relaxing boat ride over to WL then have a late dinner at CRT.
 
Since you mentioned you want to try Mama Melrose, how about on day 2 you do the FDP and eat there. This would guarantee you a seat and you wouldn't have to wait so long in line.

Since you've already done CP twice, if it were me, I'd go to WCC on the last day.
 

I used to be the Disney expert in a building with over 1,000 people. One thing I always told people that the most important thing they will do on their first trip to WDW is figure out what they want to do on their next trip.
