Help scheduling park days

My ADR date is fast approaching and I need to solidify which days we will be at each park.

We will arrive around 1pm on Sunday Sept 21st and Friday morning after breakfast at Chef Mickey.

We want to go to MNSSHP and want two full days at MK, one at Epcot and AK and at least a half day at HS. My DD5 and DNephew 3 will be touring with my sister and I. Our only options for MNSSHP are arrival night and Tuesday night. We are no opposed to getting park hoppers, but probably won't.

My thoughts:

Arrive Sunday, do HS with FPP
Monday, do AK
Tuesday, do MK with pre-RD breakfast - go back to room around noon, and return around 4pm for party
Wednesday - do Epcot
Thursday, do MK again
Friday, Chef Mickey breakfast and depart.

My only problem is the late night at the party. With FPP not allowing both Soarin and Test Track, I believe we'd have to do rope drop in order to do both... and they are both DD's favorite rides. I suppose we could switch Epcot to Monday and do AK Wednesday since rope drop won't be so important if we have FPP since KS and EE could be covered by FPP.

Any advice!! Originally I was hoping to do party on Thursday night, since we did MNSSHP on a Thursday last year, but I didn't know September had different nights. Which would have allowed us to hit morning EMH at Epcot Tuesday. Even though we could use party ticket and still do Epcot Tuesday, I feel like MK is still a rope drop park, so wouldn't want to do MK morning after party.

THANKS!!

I agree with your idea of switching AK to the day after the late party. We always do RD and AK, in my opinion, is the lowest priority park for RD. If Soarin and Test Track are crucial, I would definitely plan to do RD for EPCOT.
