Help plan FP strategy

I am trying to figure which FP to choose that would be best for us. We are a family of 4 with a 8yr old dd and a 3 yr old ds. We will only have 3 days in the parks, so we are doing two days in MK and one day in Epcot. We have an ADR for Chef Mickey's, CRT, Akershus, and the Crystal palace.
Dd loves the princesses and I want her to see as many as possible, but don't want to use FP to see a character we've seen at say breakfast. Like she really likes Belle and I thought about using a FP for Storytime with Belle, but if she can see her at an ADR I don't want to waste it. Then there are the rides to add in. There are so many choices it's making my head swim. Can y'all help me figure out which ones to choose for us?
