HELP! Need last ADR Reservation recommendations!

I am finalizing our plans for our trip to Disney World. I have our fastpass reservations and I am reviewing how everything flows. It is myself, my husband and our two daughters, 7 and 5. This is our 3rd trip to Disney World. We are staying at The Wilderness Lodge and will be flying in Friday, January 29th late and leave Saturday, February 6th late as well. So, we have (8) Sit Down Dinning Credits.

I have the following reservations:
Items in Blue are pretty much set, we def want to do. All of them will be new dinning expieences for us with the exception for BOMA.
Red items I am wavering as to whether to keep the reservation.

Saturday, January 30th:
MAGIC KINGDOM
No Sit down reservations today. Hoping to hit Trader Sam's for a drink and perhaps dinner at Captan Cook's

Sunday, January 31st:

EPCOT DAY
Whispering Canyon Breakfast @ 9:05 AM (Planning on taking it slow in the AM and head over to Epcot in time for our Test Track Fast Passes @ 11:45
Via Napoli Dinner @ 6:30 PM

Monday, February 1st:

MAGIC KINGDOM
Be Our Guest Breakfast @ 8:15 AM
Hoop Dee Doo Review @ 6:15 PM

Tuesday, February 2nd:

ANIMAL KINGDOM
BOMA @ 6:25 PM

Wednesday, February 3rd:

MAGIC KINGDOM
Whispering Canyon @ 5:05 (But I think I am canceling this, as we have Wishes Fast Passes @ 7:35 and know that will be way too tight of a schedule. My husband really loved this meal last time but I don't see when we could add it in with the schedule the way it is.)
The Skipper Canteen - Thinking of trying to get a reservation, but as of know it is still day of. So, maybe try this day for that meal?

HOLLYWOOD STUDIOS
Sci-Fi Dinner @ 1:45
Star Wars Dessert Party @7:00 PM

Friday, February 5th:

OPEN DAY (We wanted to keep the day open to decide what we wanted to do) But I feel like this day may need to have a set reservation. But I just can't decide where!)
Tusker House @ 12:55 PM (I really want to go here but just not sure we will want to go back to Animal Kingdom. And I don't want to keep reservations too long that we won't use.)

Saturday, February 6th:

MAGIC KINGDOM
The Plaza @ 1:25 PM (Not sure if I want to keep this one. I have heard it's good but it's just sandwiches -- Thoughts?)

Any and all suggestions are welcome! Please comment.
 
We like Tusker House, but we don't usually spend more than half a day at AK. So, I can see why you would want to cancel. If you really want to go, you could cancel or switch with Boma. I haven't done Boma, so no thoughts there. I would cancel Whispering Canyon dinner too. I hate being rushed. Haven't done Plaza. I don't like to feel like I have to have an ADR for everyday. In fact, since we have done BOG lunch & dinner and Skipper's is walk up, I don't have any ADRs for our MK day. The other TS options there seem kind of lackluster.

I would cancel Tusker House on teh second AK day and would also cancel WCC dinner.

The food at Boma and TH are similar, not the same, but enough so that I would not want to make that commitment to dining. If you decide to go back to AK< I would have CS, the options there are good.

I think that if you keep the WCC ADR you wil be stressed trying to get back to teh MK for you FP timeframe.

I wonder if the Plaza is a bit of a waste of a TS credit. If it was me, I would probaby have CS on the nigth you planned WCC, cancel the Plaza and use the two credits for a signature meal someplace. I don't knpw how your evening look, but since you are staying at WL, you have a lot of options close by. Artist Point is good, as is Narcoossee at the Grand.
 
A couple of thoughts:

- My family was always the kind of family (and still are) that could spend two days at AK. We love it. Heck, watching the meerkats alone could take an hour. We also love taking the train to the Conservation Center. (Do you know you can watch actual veterinarian procedures there?!) I remember riding Primeval Whirl about 10 times one trip. And riding Expedition Everest, and Kali several times over. We love that park, only second to MK in my mind, and a second day there is wonderful and can be relaxing.

HOWEVER...

- I think you can make your plans and be a bit flexible once you are there. I think you will find that if you want to cancel one or more of your ADRs (before 24 hours of course), there will be plenty of options a few days, or even the day of, to replace it. As an experiment I just looked on My Disney Experience to see what was available for dinner TONIGHT (12/29) for 4 people, a VERY busy time at WDW and yet there are well over 50 options including Whispering Canyon, Trail's End, Tusker House, and more.

-Also, I know you've been there before, but don't forget to have some down time at the resort. You can always have the morning hanging out at the resort, then go to AK for lunch and decide if you want to stay or go somewhere else.

If your open day is a "hang at the resort" day, maybe head over to Disney Springs for the evening. Lots of good restaurant choices. My 6 year old dd loved the dancers at Raglan Road. Fun place and the food is great.
 
Friday the 5th I would totally try to get an Ohana breakfast! We LOVE Ohana- it's all you care to enjoy so you'll be full for hours, and the atmosphere is super fun (lilo and stitch character breakfast).

Then the rest of your day is still open (:
 
With a 5 & 7 year old, I'd swap out Hoop Dee Doo for 1900 Park Fare (you have a decided lack of princess meals - at least my 7 yr old DD would think so!) if you could get reservations or try for your open Friday, that way you're not tied to a park. The stepsisters & stepmother were our absolute favorite interaction.

I hear you! This might be our first trip with no princesses! Out first trip (my girls were 5 & 3) we did Cinderella's Royal Table and Askersh Princess dinner. We did 1900 Park Fare on our last trip. We loved it and I was thinking about repeating it.

I *just* looked at 'Ohana breakfast on the 5th and it shows an 7:35 and 10:35am availability for a party of four!!!
