Help Michiganders zehnders cranberry salad recipe

I know some of you have had zehnders cranberry/orange salad (relish). I'm making cranberry salad for our work party and someone wants this. She says it's great. Anyone have any ideas what's in it. Besides cranberries and oranges of course.

I don't see any recipes on the Zehnder's site, but I know that Bavarian has quite a few online so try that one. Zehnder family owns both, so it should be the same.
 
I'm going to Frankenmuth tomorrow and will be having lunch at Zehnder's. i will see what I can find out, if anything. I have a cookbook called "From Grandma, With Love" written by Chef John Zehnder, but it is cookies, cakes, brownies, etc. No recipe for the cranberry/orange relish. I agree that it is delish!

Zehnder's Cranberry-Apple Relish

1 lb. Northern Spy apples
1 lb. dark red cranberries
2 cups sugar
2 whole Navel oranges, peel on

1. Wash and core the apples, leaving the skin intact.
2. Freeze the cranberries solid.
3. In a food processor, add half frozen cranberries and half apples and turn to chop speed so that the pieces are about a 1/4" square.
4. Chop the entire pound of apples/ cranberries and place in large mixing bowl and add sugar. Chop the peel-on whole navel oranges to the same consistency and mix into the apples/ cranberries/ sugar.
5. Refrigerate and let set 1 hour before serving.

It must be about 20 years since I have had Zehnders but I still long for it!

I would love to visit Frankenmuth this time of year!

The Bavarian Inn recipe is slightly different than Zehnder's.

Frankenmuth Bavarian Inn's Cranberry-Orange Relish

24 oz. frozen cranberries (semi-thawed)
3 medium apples, cut into 1 inch chunks
2 seedless oranges, cut into 1 inch chunks
2 cups sugar

Sort cranberries, removing any bad ones. Core apples (do not remove peel). Grind cranberries, apples and oranges (with orange peel) on coarse or medium grind.
Mix together well, adding sugar to taste. A bit of red food coloring can be added if desired.
Refrigerate. This dish keeps well for several days in refrigerator or can be made ahead and frozen for up to 3 months.

I make this every year for Thanksgiving dinner and a potluck at our church. Everyone always wants the recipe.

Thank you, I grew up going to Frankenmuth and their cran relish is the bomb. I'll make this for Xmas.
