Cooking Help me with this appetizer

For our wedding, DF and I have decided that we want prosciutto wrapped lobster chunks, we love them :lovestruc

Any hoo, I told my wedding planner that, and she suggested that we don't have just seafood as our appetizer, and suggests that we add something to it. I'm thinking maybe put it on a bed of something? :confused3

What would you add to it? Keep in mind it's only supposed to be an appetizer, so I don't want much added...

Is that your only apopetizer? If not I suggest you maybe have something else in case you have anyone at your wedding that can't ewat seafood- you could go with prosciutto wrapped something else (sorry I haven't eatan anything likew this so I don't know what might go well (maybe a meatball) or something that is althogether vegetarian if you will have much of anyone who is vegetrian.

Is this going to be a plated app or something passed around the room? if it is plated I would go with a bed of something light like lettuce- if it is being passed I would simply add a different app to be passed as well.
 
proscutto wrapped round asparagus is very nice (especially with hollandaise - which I'm guessing would also work with lobster chunks) but as Rebecca says you need to think about anyone who can't/wont eat Seafood. Also, while some vegetarians would unpick the proscuttio, others might not touch anything that had been in contact with meat. (And I know one person wh is allergic to pork so couldn't eat either!) How about a plate of mixed leaves with either the lobster chunks or grilled goats cheese?

I think she was suggesting that you add another appetizer and not just add something to the one you have already planned. There are some people who cannot eat seafood for whatever reason or may not like lobster (crazy people that they be!). You may also come across somebody who does not like prosciutto so why not add something a bit more mainstream? You could do stuffed mushrooms or mini quiches or even some exotic cheese with crackers...giving your guests some options would be appreciated I'm sure.
 

If your budget only allows you one appetizer (as great as the lobster sounds), then I would put it on a saffron risotto or compliment it with a beet tartar.

If your budget can afford a second appetizer, I would highly suggest that. A lot of people can't eat or don't like seafood.

I've already checked with all the guests to make sure there are no allergies, or just food they don't like, and I only got 2 celiacs, no other problems.

I was thinking about the asparagus, I personally don't like it, but it does look good.

It's plated, so something like lettuce does sound nice, especially because the best way to have this lobster is with a thick balsamic drizzle, so IMO that would go well with the lettuce as well :cloud9:

I think though I'm going to let the chef decide :rolleyes: I'm a bit of a control freak, but I figure they'd know better then me what would go well with this dish.
