Help me plan

We will be there 3 days, but only 2 nights. The first day we get there around noon. The second day is a full day and we plan doing EE at US. The third day we have until 5 pm.
I was hoping to go to Ollivanders on the first afternoon to get an interactive wand so we would have it the rest of the time.
But what else should we do that afternoon?
US closes at 5 and IoA closes at 8.
This is our must do list:
Harry Potter: Ollivander's-interactive wand and stops.
Gringotts.
Diagon Alley-Shops and details.
Night bus driver.
Hogwarts express-both ways.
Forbidden Journey.
Hogsmeade-shops and details.

Other Rides:
US:
Despicable Me.
ET.
Men in Black.
Mummy.
Transformers.
Shrek 4D-maybe.

IoA:
Jurassic Park.
Kong.
Spider-Man.
Hulk.
Dragon Challenge.

I have no idea what to do on what days.
We are staying at Portifino Bay and would like a little pool time.

We are there from noon on Saturday Oct 15 to 5:00 on the 17th.

Staying at PBR is wonderful and you will want to do the pools. You will be able to do most of the Harry Potter lands on your first day if you want. Start at USO and do Knight Bus, all your shops, interactive stops and see the live shows. Skip Gringotts at this time. Take HE over to IOA. Finish the night with FJ, Dragons and dinner at the Three Broomsticks.

Day 2. Are you sure EE is at US that day? If so, do Gringotts then Despicable Me, RRR and Transformers. Take a midday break for the pool. MIB, Mummy and ET can be done easily later.

Day 3. Rope drop IOA. Do Kong, then Hulk then Spiderman and Jurassic park. You will have time to do other things or re-ride from that point.
