Just made a flourless chocolate cake yesterday, here's the recipe...
1 lb bittersweet chocolate, finely chopped
2 sticks unsalted butter
8 eggs
6 oz milk chocolate, chopped
6 tablespoons heavy cream
Melt butter and finely chopped bittersweet chocolate in bowl over a pot of boiling water. Stir so that all lumps are gone. Set aside and wait until mixture is luke warm. Whisk 8 eggs into chocolate mixture until well blended. Butter a spring form pan and then wrap the bottom in heavy foil. Pour prepared mixture into pan.
Place spring form pan in a roasting pan and fill to about an inch with hot water. Bake at 350 degrees for 30-35 minutes until the edges are done but the center is still a little wobbly. Place on wire rack and let cool to room temperature and then cover and chill for 6 hours.
After it has chilled for 6 hours make the topping. Bring heavy cream to a boil and immediately pour into bowl of chopped milk chocolate. Let stand 5 minutes and then stir until it is all blended. Let the topping cool for a few minutes and then spoon over top.
Chill again for another 3 hours.
