Help me Help me...I think I've lost my mind!!!

Hello all! I am fairly new to the Disboards but I must say that I am now addicted!! I have found so much helpful information so thank you to all! Here is the story.... I am trying to plan a last minute trip to WDW for May 1-7. Am I crazy to think this can be accomplished?! Anyways, it would be DW (me), DH, and 2 boys ( not my kids, ages 7 &10--never been to WDW). This could possibly be the only trip they will ever get to take to WDW. Their parents have said they can miss school just to go on this trip since it is a once in a lifetime oppurtunity. I am wanting to take this trip in May so that I can get the resort discount and it's not premier season. I plan on staying at CSR and also using the DP to help with our meals. DH has been to WDW several times as a child but did not ever stay at a resort except maybe once. I would like to make the most of this trip for the boys knowing we won't get to do everything but hoping we can hit the high points. I hope some of you will be able to offer advice for dining options both QS and TS. I have a few I know I want to try based on reviews I have read and have listed them below. I also felt it wasn't necessary for PH passes since I believe we will be in each park for most of the day and then hopefully to the pool to relax on some. Thank you all for taking the time to read this post and for any advice you may offer.


Here is the tenative schedule:

Sunday May 1: arrival morning/early afternoon? MK (Extra Magic Hours Evening)
Need lunch/dinner ideas please!

Monday May 2: AK (Extra Magic Hours Morning)
Tuskar House Safari Breakfast

Tuesday May 3: HS
QS meal???
F! Dinner pkg Mama Melrose's (if we can ADR)

Wednesday May4: US/IOA
TS at a resort???

Thursday, May 5: Do we go back to MK for Extra Magic Hours Morning?? or
do we go to Epcot? hmm?
Would like to go to Hoop de doo

Friday, May 6: No plan? Sea world?

Saturday, May 7: Depart day...DTD??


Or should we do DTD on Sunday (arrival day) and do MK Thursday? I need major help!!!!
