Help me decide what to make for dinner...

I've got 32 minutes to have dinner on the table for my DW or she'll berate me senseless. :)

I have fresh heirloom tomatoes, fresh corn, lettuce, onions, vegetable broth, almond butter (not sure how that could help), mustard greens.

I also have canned beans. And two bagels. And a loaf of bread in the freezer. Also some edamame.

Oh, and did I mention, we're vegetarians?

Any ideas? :)
 
You don't mention rice or potatoes. Those are staples in my house. That would be a great help. Without those items, and only using the things you mentioned, I would make hummus sandwiches or a bean spread to put on the bagels.

What type of beans? Garbanzo? If so, make some hummus. If not, try a Mexican bean spread. Hopefully, you have some salsa to add to it. Spread it over the bagels and add the lettuce and tomato. Roast the corn and serve on the side along with steamed mustard greens with some vinegar.

I keep rice and potatoes on hand at all times. That way we can serve anything we have over those items to make it more filling. If you have some rice ready (or you have some quick cooking brown rice you can whip up), I would make a shell-less taco salad.
 
Yeah we have rice, but not enough time to make it. (We don't do converted rice.) We normally make a big batch of rice over the weekend, and go through it over the course of the week, but we didn't make any last weekend so whatever's left in the fridge now is 2 weeks old. :eek:

No potatoes here.

Yeah we have garbanzos... and we regularly make hummus. No tahini in the house, but we can sub the nut butter. And we have some leftover salsa - not sure what color it is at this point though. :eek:

I think you've hit on it there. Off to make hummus!

Here's one idea, hope I'm not too late!

1. Mixed salad using the lettuce, mustard greens, tomatoes, onion (if Bermuda/ purple or green) & edamame. Do you have nuts you can toast such as walnuts, almonds or pecans? Mix up some dressing with olive oil/vinegar at 3:1 ratio with some minced garlic & black pepper.

2. Toasted bean/veggie open faced sandwiches. Lightly saute some onion, then add the corn, tomatoes & beans. Spread on some bread & lightly broil. Add a little cheese on top before broiling, if you like.

Voila! Enjoy..

Oh sure, bury the lead...I was all set with a great idea until the vegetarian bit.

Probably too late but I would make a tortilla soup (if you have chips, you did say you had salsa and hummus so I'm just guessing)

Tomatoes, corn, beans (black or pinto if you have them) add in after sauteeing onions. Then add veggie broth and taco seasoning or cumin/chili powder. If your leftover salsa is still okay you could dump it in the soup.

Top with chips, cheese (if you eat that), cilantro if you have it

:eek: indeed. Do your bit for marital harmony and chuck that old rice out now! Unless you freeze it it is inadvisable to eat after 6 days. She will thank you for helping to clean the fridge!

Enjoy the hummus. I see that you live fairly close to me and I'm hot. Salad time. So we both will be eating hummus and, in my case, home grown salad and angel hair pasta with home-made pesto on the side. My pesto contains cheese but you can leave that out if you are vegan. We also had a great crop of tomatoes this year and the lettuce is still OK.

Stand up for yourself, man! Don't let that wifey berate you! If she doesn't like the mishmosh of all that stuff thrown together in a bowl, insist she take you out to dinner and bring back the romance! No man should have to take that kind of treatment! And sorry, I'd be heading out the door if I had in the house what you have in the house -- picky eater, I apologize.
 
Dinner went well, so well that DW and I made peach cobbler afterward. :)
 
Bicker I have to say this is the first time I have ever read anything that you seemed so....normal...:lmao: I mean that in the nicest way, no grandstanding or lecturing just a poor sap shaking in his boots waiting for DW to get home...I have to say I could start to like you :)
