Help me decide on arrival night dinner..

Wherever you can easily get an ADR.

I would say for the reality that this will be the first night, RR, is probably the best possibility.
Need more info:

What kind of food do they like? Adventurous eaters? Foodies? Or basic meat and potatoes couple? Are they on a budget, or wanting to splurge?
Based on the preferences above sounds like meat and potato people.
 

I voted for Ohana, but would also consider Boma. Haven't been to either since they reopened, but they have both been my favorite restaurant for years. I am stalking an Ohana now for our arrival night. I wasn't able to book it on our 60 day window, so that's the biggest downside of planning for that restaurant. I have something else booked as a placeholder if I can't get a reservation.
 
My family always does chef mickeys as our arrival day dinner, but we have kids. Not sure two adults would like it. Beaches and cream would be nice, it’s relatively inexpensive (by Disney standards) and they can take the skyline for the first time of the trip.
 
For two adults staying at Pop I would take it easy and take the Skyliner to Riviera and do Topolino's Terrace. Since that is being a little hard to come by right now my second choice would be Sebastian's at Caribbean Beach. I've read great things about the new family style menu and the price can't be beat! Lastly, if I felt like putting in a little more effort I would do Wine Bar George at Disney Springs. Since you can book on Open Table there should be no issues with grabbing a reservation.
 
Raglan Road is a lot of fun, and would put them at Disney Springs where there are plenty of things to do and see on their first night.

Or, if they will be weary from traveling and are looking for something a little more low-key, either ‘Ohana or Kona Cafe at the Poly, then MK fireworks from the beach afterward. I personally would recommend Kona over the current state at ‘Ohana, due to price, service and quailty of food, but ’Ohana is more of an experience and lots of people love it, so YMMV.
 
I’d do one of the Disney springs places, based on your checking out the menus. I ate at House of Blues and it was good, nothing that stood out, but we enjoyed our meal, food was good. Haven’t tried RR yet, but have heard good things.
Then I’d take the off time to walk around DS for something to do at night.
Id also consider the Boathouse, as I’ve heard some amazing things, especially from those who just order all the little bites with drinks, like the Sliders. Check out their menu. That way we could share there, and then later get an awesome dessert, where at DS the choices are plentiful, maybe a ghiardellu sundae, or maybe before eating enter the Gideon’s virtualq to later be called back while walking around
 
I hate to make an ADR on arrival day because so much can happen to throw off your plans. I would choose to make a reservation on Open Table for DS, do a QS on the skyliner or see if there were any day of reservations available.
 
I never book a dinner on arrival night, too much can happen to change one's mind. That said I voted Ragland because I would suggest Disney Springs. Take the bus, wander, dinner, shop, sweets and just enjoy the evening. I find it hard to get to DS so I like to do it a non-park day.
 
It really depends on when they are to arrive. If we are arriving late afternoon, often we don't plan an ADR as you never know if you will arrive on time.
If thats not a concern, I would do Raglan Road. Lots of fun. We enjoy doing Disney Springs on our arrival day. Not as crazy as the parks and lots of good options there.
