Help me decide - MK or EPCOT?

We are going to have basically 4 1/2 park days for this summer's trip. We will arrive likely a little before noon on a Sunday. We plan on doing each park one day - five day passes, no hoppers. Most likely will be AK on Monday, DHS or MK Tuesday, the other one on Wednesday, and Epcot on Thursday. But I keep going back and forth over which park to go to on our arrival day!

It will be me, DH, and DS-15. DH doesn't like a ton of rides, he gets motion sickness pretty easily; he can handle things like IASW and Pooh, but admitted after his second trip on PP that the turns made him queasy and he may sit it out this trip. DS isn't much more adventurous than his dad, though I may be able to talk him into a handful of other tamer rides if we watch videos of them first. No thrill rides or coasters for us, not even the mine train. We like to watch shows, DS likes meeting characters (esp princesses, but others as well), and shop and take in the sights. DS has autism, and can usually only tolerate a few hours at a time in the parks, so we plan for a decent mid day break and dinner at POR food court before returning to the park for the evening.

My initial thought was MK on arrival day. It had a lot of attractions, has things DS may like riding multiple times, and it just FEELS like the first thing you should do, you know? Walk down Main Street and see the castle? DH agreed with me that MK would be his choice for arrival day.

But then, I started thinking about how, in our two previous trips, I never felt like we had enough time to explore WS in Epcot! Granted, it poured excessively on both our Epcot days, both previous trips (what's the chances!!), so that slowed us down a bit, but it so huge and we always do RD, so by the time we finish up in FW, we are getting worn out from walking! I asked DS for his opinion, and he said he'd rather do Epcot the first day - primarily because Soarin' is his favorite ride in all of WDW! He gets the DAS, and we can usually use it to get 3 rides or so in one day for he and I (DH can't handle it). The more I thought about it, the more I started thinking that maybe Epcot would be a better choice - it would give us more time to explore, more time to EAT (I have many snack items I'd like to try), and keep DS happy.
But then we wouldn't have that magical Main Street castle experience until halfway through our trip!
